I just found this video today.  There's a heck of a lot of food on that mexican plate... I will be making this dish over the weekend.  (The laptop on the counter as I follow the video  Grin )

I did make this dish, however, I think the tofu was too soft b/c it was way to mushy in my mouth. Maybe I should try it again with really firm tofu and smaller pieces. I do agree with you that tofu has no taste really, it is the texture that's got me not wanting to ever it tofu again...but I will try Smiley

Use xtra firm tofu and use shallow baking dishes so you get a crunchy top..... don't be afraid to use a heavy hand with your fav cheese, Yum!
