Had a wonderfull lunch with the leftover food from the Mexican Fiesta!

Mixed the enchilada filling with the rest of the beans (black soy) and heated it all up in the microwave....made a nice green salad, put a little ranch dressing on the greens then a handful of pork rinds then the hot meat and bean mixture then some grated Jarlsberg cheese which melted nicely  ABSOLUTLY delish and filling...nil for carb count  The rinds get soft pretty quick so eat the ones in the salad first then have a few "scooper's" on the side!

hi Phil Smiley the sauce is La Victoria and the beans were Eden brand...most "yuppie" food stores like Whole Foods carry them on the shelf as do many health food stores.

You can order the black soy beans online (maybe Netrition?). I found them as I traveled this summer, stopping at health food stores along the way.
