Coconut Bread From The Fat to Skinny Bakery

Coconut Bread





2 large eggs
1 1/4 cups coconut milk (should be 0 carbs)
2 teaspoon vanilla extract
2 1/2 cups soy flour
2 teaspoons baking powder
2 teaspoons cinnamon
24 drops FAT TO SKINNY Zero Sweetener
11/2 cups unsweetened coconut
6 tablespoons unsalted butter, melted
Vegetable oil or nonstick cooking spray .

1. Heat oven to 350 degrees. In a small bowl, whisk together eggs, milk and vanilla.
2. In a medium bowl, combine together 2 1/2 cups soy flour, baking powder and cinnamon. Add sweetener and coconut, and stir to mix. Make a well in the center, and pour in egg mixture. Gradually mix with dry ingredients, until just combined. Add melted butter, and stir until smooth. Do not overmix.
3. Spray a  8 1/2-by-4-inch loaf pan with non stick cooking spray. Pour batter into pan. Bake until a toothpick inserted into center comes out clean, 45 minutes.Cool in pan 5 minutes, remove bread from pan, and finish cooling on a rack.
4. To serve, cut into 16 slices. If desired, toast lightly and spread with butter.
2.69 carbs per serving

***TIP Carbs can be reduced by using almond flour or cutting the soy flour 50/50 with almond flour.

Umpa you are the best!
Question - can I use stevia instead of xylitol?  I still can't find it anywhere.
Although, I did make the ice cream yesterday with stevia and it wasn't really sweet enough, so I might have answered my own question!  LOL

one big question... where can i find coconut milk i've been looking for it everywhere!!!!!

In my grocery store they sell it next to the almond milk in the dairy display in the milk section.You can also buy it in the can in the asian/Spanish section of the grocery store.What state are you in Maria?

Hey UMPA, how about some coconut bread toasted golden brown drizzled with melted butter then slathered with cream cheese......YUMMY!!!!!!!!!!!!!!  ::)
