Hey Amber!  We didn't email all day today! ha ha
I know Doug's recipe calls for extra firm tofu, but I worried about the "texture" thing too.  I used the pack of tofu that just said "firm", and I really enjoyed it.  Sherripie asked me to take a picture of it to send to her on fb.  I was a little embarrassed, because I had already ate TWO servings out of my 9x9 dish.  ha ha  (and I wonder why I plateau!  :-[)   The pic is in my FTS recipe album if you want to see it.   I will definitely make this again!   :)

I can't believe we didn't email!  I made the baked chicken meatballs tonight but use pork. I will post picture tomorrow. They were really good.

I've used firm instead of extra firm, too, and it was good. Maybe it was better... I'll have to make it again with firm and see how it works.

Amer, the meatballs sound good! I'll watch for the picture.  I am just trying to add some new things to keep it interesting.  Bought the asparagus this week too!  ;)

Sarah,  I cut my cubes of tofu up really small too.  I always "thought" tofu was gross.  However, when I heard Doug comparing tofu & pasta saying that they just use soy flour in the tofu....that didn't sound gross at all.  :)

When I make this recipe I spread the mix out fairly thin in the baking dish vs deep dish. This gives the tofu a chance to dry out a bit more and creates a larger crust area which I love :)

And for some reason, my search of our forum did not turn this recipe up either.
