Well....let me tell ya!.... keylime cheesecake, brownies, spinach muffins, homemade chocolates...... most of the recipes I found on here! Umpa is great to change any recipe to a FTS (Fat to Skinny) friendly recipe. But, I think we are making Doug and Umpa proud because we have all been making our own versions and sharing them on here. They have taught us how to ride with training wheels and some of us are taking off those training wheels, but we still like to know they are running right beside us!

I made Umpa's Jicama potato salad tonight...it was a HUGE hit with the family....Soooooooooo good!!!

I am very proud of all of you for the recipes you have been coming up with! It actually helps me come up with new recipes for the new books when you tell me what you are missing! This is a lifestyle change, you should never go without anything you want to eat.

Im trying to find someplace where I can get sugar free chocolates that the place also has the nutrition information available. Im more than willing to buy online or make a bit of a drive but have yet to find anything. katary? A little help here?

In North Carolina they have homemade fudge stores.They all have beautiful sugarfree chocolates! Lotsa malitol though! You can request carb counts at the counter.Hope this helps!

We have them in maggie valley, cherokee, anywhere the tourist gather.They are fudge shops.They sell sugar free too.i think there is one at uncle bills fleamarket too.

how long in the pan? how do you know its cooked properly? Im going to make some jicama fries tonight

Hi Nic, sorry for the late response....you are probably cooking right now! I pan fry the fries in olive oils with a bit of bacon grease thrown in to help them brown. I've never timed them because that will depend on how thick you cut them. I just flip them and take them out when browned. They always retain a bit of a crunch, that's normal.
