I had my evening all planned out:  Cream Cheese Pancakes for dinner because my husband had a business trip and I was going to get to have the WHOLE HOUSE TO MYSELF for an evening.  His flight was cancelled so he's home.  He knew enough to warn me that my ALONE time isn't going to happen.

I'm going to have those pancakes for dinner anyway!

Disclaimer:  We have a great relationship but he works from a home office and I was a stay at home mom for many years and I rarely the house to myself anymore.

Tony, I LOVE horses! I haven't had one of my own since I was a teenager, but I do hope to have another one someday.   ;)  A new Tractor Supply Store had opened in town, and that's more fun than the mall!   ha ha  ;D

Yummy!!  Gotta make these!  Anyone know a recipe for low carb strawberry syrup or sauce?  I was thinking I could perhaps just cook frozen strawberries on the stovetop with a bit of zero??

Your strawberry solution sounds like a good one.  I had these for dinner last night.  Easy, delicious, perfect.

Andrea that is the key to a great marriage,knowing when you need a breather.  :) I don't think judges release women from murdering their husbands anymore because they were on their periods like in the good old days! :D

Kim I use waldenfarms because I can get it in my grocery store , but you can make your own strawberry sauce by boiling down strawberries(1 cup) with water(1/2 cup or less depending on how thick you want it.),zero and a pinch of xantham gum(1/4 teaspoon).This will work for blackberries too. ;)

 today i went to a new health food store and found
 xylitol, black soy bean, and scandinavian crispbread.

  for lunch i had meatballs smothered in cream of spinach and a little pesto delicious

Tried the cream cheese pancakes for breakfast this morning, and the verdict is:   Mommy likes!!!! ;D    I made them with the cinnamon, used the sf pancake syrup, and added a side of sausage.  I agree that they are more like crepes.   Very light and tasty!!  Thanks so much for sharing this recpie!!   :)

I saw a recipe where you just use protein powder and enough water to make it "battery-ish" and then add whatever flavors to make pancakes. I haven't tried it yet.

I made these this morning. Fantastic! I tried them with sf maple syrup, and with sf raspberry syrup. Both were excellent.
