chocolate coconut pecan pancakes

Sorry if this is reposting. I have tried 3 times and it doesn't seem to stick! I also cannot seem to get the photo uploaded, so you can find it on my FB page in the folder called, "out with the old, in with the new."

These pancakes can be made as muffins instead.

Chocolate Coconut Pecan Pancakes

1 cup almond meal/flour
2 T cocoa
1/3 cup xylitol or 15 drops FAT TO SKINNY Zero Sweetener
1 egg
1 tsp vanilla
½ tsp cream of tartar
½ tsp baking powder
½ cup light cream (instead of heavy whipping cream)
¼ to ½ cup unsweetened coconut
¼ to ½ cup chopped pecans



Spray your cooking surface with non-stick spray. Stir all ingredients (except coconut and pecans) together and pour pancakes onto a griddle (or into a frying pan). Sprinkle the top of the pancakes (as they are beginning to cook) with unsweetened coconut and pecan pieces. Flip them when the bottom side is done.

Add your favorite toppings when finished.

Man o Man that sounds good. I will give it a try birthday girl. I'm glad there was no pic I'm starving and I just had to replace my last monitor cause I ate,I mean I broke it. ;D

Great recipe! I am technical writer and I dont have too much time for cooking, but I'll definitely prepare this pancakes/muffins for my children. They will be very happy. Thank you for idea!

Umpa, is there an e asy way for me to figure out the carb counts on these recipes so I don't have to keep bugging you?  I really want to try some of these and most of the ones that sound good to me don't have the counts on them.  Thank you!  Oh, and I'm doing really well so far! 8)
