Low Carb Egg Nog for the holidays by Rena

FTS Eggnog

4 egg yolks, beaten
2 cups unsweetened almond milk
1/3 cup Xylitol
1 cup heavy whipping cream
2-4 tablespoons rum
1 teaspoon vanilla extract

In a large saucepan, cook and stir egg yolks, milk, and Xylitol on medium heat until a metal spoon comes out coated. Remove from heat and place saucepan in a sink or bowl of ice water. Stir for 2 minutes. Remove and stir in whipping cream, rum, and vanilla. Mix well and place in a covered container for 4 to 24 hours. Sprinkle with nutmeg before serving. Makes 7 servings.

Approximately 1.6 carbs per serving -- I used Silk Unsweetened Almond Milk which is 0 carbs. I also used spiced rum, but I suppose you could use a sugar-free rum syrup, which would make it even more sweet.

I posted in another section about this recipe but I wanted to post here so others will see my input.

This recipe rocks! It is going to be my holiday recipe for egg nog every year now! Thanks again Rena!

Did you see the Baileys Irish cream recipe that shihtzumom put up sansucre?& carbs for the whole bottle ;)

Feeling good Umpa!  Thanks for asking!  Started at the gym this morning; starting light and going from there.  No problems since then and just trying not to stress about so much stuff!

  Good.I was worried. :)Exercise really helps keep my stress level manageable.Doug bought me a bike for my birthday and a recurve bow from 1968.Its great exercise!

Thanks for posting this, Doug.

I used spiced Captain Morgan rum in mine, which made it really good. I might make more for NYE! :)
