Bok Choy salad

Google "yummy bok Choy salad" it was super yummy.  I did use stevia instead of sugar, 1/2 of the oil, left out the ramen noodles, and added black toasted sesame seeds.  Great way to get some really low carb greens in.  It was even good the next day.

Ingredients

    * 1/4 cup olive oil
    * 1/4 cup white vinegar
    * 1/4 cup xylitol
    * 3 tablespoons soy sauce
    * 2 bunches baby bok choy, cleaned and sliced
    * 3 green onions, chopped
    * 1/8 cup slivered almonds, toasted
    * 1 tablespoon sesame oil
    * 1 teaspoon black sesame seeds

Directions

   1. In a glass jar with a lid, mix together olive oil, sesame oil, white vinegar, xylitol, and soy sauce. Close the lid, and shake until well mixed.
   2. Combine the bok choy, green onions and almonds in a salad bowl. Toss with dressing and sesame seeds, and serve.

Thanks I think I am mastering cut and paste. :D  Going to make this for my son's and my birthday party this weekend. Was in a stump for sides and ran across this one.  Makes enough for a big group.

Hi Beth! :)

My wife suggested adding chunks of cooked chicken breast to the dressing.

I added chicken the night before and allowed it to marinate until dinner time.
It made a delicious main dish when added to the bok choy!
It would also make filling side with a main course chicken dish! 8)
What you do today is what matters!

What a great idea Tony...Tony's wife actually! :D. You could make a batch, add the chicken and have a few meals lunch and/or dinner. :)
