Katary...I'm going to try this as my first trial literally flopped with another recipe! lol  Is the Just Eggwhites at Kroger and is 3Tbs equivalent to 3 egg whites?  I only would need the water if I was using the just eggwhites, correct?

UPDATE:  I just returned from Kroger and purchased the  just egg whites and see the comparison on the side.  So, never mind.  I'll let you know how they turn out.  I can't tolerate the taste of saccharin...using xylitol instead.

Ok they are done and boy did they smell heavenly while cooking.  They are a little gummy like a marshmallow but maybe they will crisp up while cooling?

[A few hours later]....Wow they are airy and crunchy! Wonderful and flavorful!  Love them with the strawberry spread and chocolate.

I watched this last night and wrote it all down.  These look SO good!   I was a little shocked when you said to bake them for "2 hours"..??   If I got that wrong, somebody holler at me.  I am staying with my mom for a couple days.  She had foot surgery, but I will try these when I get back home.   I had been looking for the sugar free meringue cookies at Publix, but they only have the low fat ones.  Thanks Gary!  Love the videos...keep them coming!!!  :D

Yep!... 2 hours at 225 degrees.

Remember Gary saying you could use any flavor extract you like.
My favorite combo is banana and raspberry (1/2 tsp each)... YUM!!! ;D

Jan I got the Sf one like Publix has from netrion and they were gross I had to throw them in the garbage , I got chocolate & vanilla  BLahh,
I have not tried Garys yet I didnt want to buy the can of egg whites they were to expensive . Let me know if they were good !

That sounds interesting.
I imagine that the finished cookies would be a bit heavier and you'd have to watch them in the oven as they might cook faster.

Sure Donna!  Here it is....

Carb free meringue cookies

3 Tbsp of powdered "Just Egg Whites"
1/2 cup sweetener (or 1 Tbsp of calorie free liquid sweetener)
1/4 tsp cream of tartar
1 tsp vanilla & butternut extract (or any flavoring you choose)
1/2 cup warm water

Preheat oven to 225
Line a cookie sheet with parchment paper
In large mixing bowl lightly stir egg white powder into the water and let stand for 2 minutes.
After 2 minutes, mix on medium until dissolved and frothy
Add extract, cream of tartar, & sweetener.
Mix on high until fluffy
Spoon on to parchment paper
Bake at 225 for two hours.
Great with Walden Farms dips.
