I've never made a pumpkin pie from scratch before, but I've always heard there's a difference between a jack-o-lantern pumpkin and pie pumpkin.  Can we use any pumpkin for the recipies?

ANSWER, according to the University of Illinois extension service;

"Pumpkins are the most popular members of the squash family. Often used as an ornament, the large Jack-O-Lantern variety has become the national symbol for Halloween although it is very edible. The smaller sweet pumpkin or pie pumpkin is best for cooking. The flavor and texture are much more suitable for baking and it is served up annually in pumpkin pie at Thanksgiving."

Can you post the recipe so I can print it? Grin. cant take my desktop in the kitchen with me!  Grin


3 cups mashed cooked pumpkin
1 1/3rd cup heavy cream
1/2 cup xylitol
3 eggs
2 tsp Cinnamon
1 tsp allspice
1 tsp ground cloves
1/2 tsp ground ginger

pour processed mixture into a well greased pie pan ( I like Glass) place in a preheated 425 degree oven for 15 minutes, reduce heat to 350 and cook another 60 minutes. Cool completely before cutting, serve with whipped cream and a grinding of nutmeg on top.

process all ingredients in a "grindy thing" Smiley (food processor)

Yes beebs.In any recipe you can replace eggs with egg whites unless you are making custards or sauces. Wink

I would think it would be OK to use the egg whites, the eggs job in the recipe is a binding agent and rising agent for the other ingredients so I would say yes.

 Now, about those cup cakes with pumpkin....lets look at your recipe;  I would say why not Smiley I would omit the chocolate, the chocolate syrup and I would omit the iceing....instead crumble some chopped walnuts on top of the muffins prior to baking. I would also use the same spices I used in the pie. 1 1/2 cup of canned pure pumpkin should do the trick. Let us know how they turn out.

Beebs recipe

Cupcakes:
4 eggs
2 squares unsweetened bakers chocolate
1 1/2 c almond flour
1/4 tsp salt
1/2 tsp baking powder
1/2 tsp cream of tartar
5 tblsp xylitol
1/4 c oil
1/4 cup heavy cream
torani sugar free chocolate syrup
beat eggs and xylitol together, while melting chocolate square
add rest of ingredients put in sprayed lined muffing pan bake @ 350 for about 24 minutes

Chocolate raspberry icing:
4oz. cream cheese
3/4 c heavy cream
5 tsp xylitol
spoonful walden farm marshmallow dip
torani sugar chocolate and raspberry syrup to taste
mix top cooled muffins and yum!

They say there is a shortage and thats its selling on ebay for like $30 for 4 cans! I walked into Sam's Club and they had plenty for like $2 for the large can.Me thinks they are just trying to drive up the price.The farmers say it was a bad harvest season. Cheesy

I was told the same thing at my local Kroger yesterday. The employee I spoke to said they arent even filling his orders at the warehouse he seemed very concerned about what was going to happen at thanksgiving.  Shocked
