Line a mini muffin pan with mini muffin pan liners. In a double boiler melt 4 squares of unsweetened bakers chocolate(*the bakers chocolate was beebs idea*)Add 3/4 cup xylitol. Stir well.add 1/2 cup whipping cream.stir well. Add 1/2 cup unsweetened coconut. Mix well.fill muffin cups 3/4 full.top with unsweetened coconut.refridgerate 2 hours.
