I like to make chia pudding by adding 3 T. white chia seeds to 1 cup cold almond milk. I sweeten it with Zero and add a little vanilla and cinnamon. The longer it sets the thicker it gets. This makes 2 servings and tastes like tapioca pudding. I put it in the fridge for a few hours, stirring a few times for best results. You can use the black chia if you want but it looks funky.  ;)

This is a great post! Love all these new recipes and ideas. Plus you all have me laughing all the time!

About 5 years ago when I was on the Atkins diet I came up with a replacement for one of my favorite hot cereals, Cocowheats. I named it after my online name (BlueJeanz) so I'm sharing it here and you can feel free to share or make adjustments.

BJs Faux Cocowheats (or Fauxcowheats)

In a bowl put:

1 T. Flax meal
1 scoop Chocolate Protein Powder (I use Designer Whey)
3 T. walnut meal (finely ground walnuts, you can do this in the Coffee Grinder)
1 tsp cocoa powder
1 pkt Splenda or 2 drops Zero
//(
Slowly add 1/4 cup boiling water (more or less) while stirring. Let set for a minute and stir again.

You can top with cream and more Splenda if needed. Mmmmm.

Welcome to the board and to a new lifestyle. What is nice about eating this way is you can either keep it smple like steak and salad, or experiment with some of the delicious recipes here. I like trying new things and hope you do too, it makes it more fun to eat. / ;D

Okay, this is a keeper! I did not add the extra cream though and kept it thick. So easy to make too! Now I will go watch more videos and get more great ideas. Thank you Katary or Gary!  :-*

I read somewhere that if you boil the cabbage in water with 1/2 cup heavy cream added it gets rid of the strong cabbage taste. Never tried it so just thought I'd pass along the info. Hmm, I just thought of something...if it does work for cabbage it should work for cauliflower. I will try it like that next time I make it. Has anyone used that technique before?

I'm happy to read you are losing again, even if it is slowly. The way I think of it (since I am also a slow  loser) is that I am healing my broken metabolism. And just like healing any part of our bodies takes time and patience, so does this. I'm glad you ditched the diet jello. I have read that ASPARTAME (Nutrasweet and Equal too) can cause a blood sugar rise in some people. Switch to Splenda type sweeteners if you still want sweetness. You may be able to find sodas in your area without aspartame, most of them have it though. I found one here in PA called WAIST WATCHERS that has several flavors as well as Diet Rite brand.

You are doing the right thing for your body so just hang in there, it will work in time. In one book I read that it can take up to six months to get your metabolism working like it should but once it's fixed weight loss will be more consistent.

How does that saying go? It does not matter how slowly we go, so long as we do not stop.

I have eaten the miracle noodles in the past and, after rinsing, if you dry them out some in a frying pan over medium heat to get some of the liquid out of them they will be more like pasta. I used a non-stick pan with no oil.

These days I make faux pasta with (what else) cauliflower! I chop it into bite size pieces and cook it al dente, drain well and mix with a hearty meat sauce and smother with Parmesan cheese. Best substitute I've found yet for a nice bowl of pasta.
