They're fantastic! More of a crepe than a pancake, but suit yourself!

General Discussion / Re: It's Monday!!!! What's on your menu ?
« on: January 09, 2017, 09:33:41 PM »
My menu was bacon and eggs for breakfast, rotisserie chicken for lunch, and boneless pork ribs for supper. I made a low carb bbq sauce with low sugar ketchup, Louisiana hot sauce, Worcestershire sauce, sugar free syrup and garlic olive oil. Temp got up to 26 today. Fine grilling weather. Life is good!

I season them with Tony Chachere's creole seasoning most of the time. Sometimes I add jalapeno slices or dehydrated morel mushrooms. They're not watery if you cook them long enough.

Now that I've got about 50 zucchinis in the garden, I made some frozen hash browns with them. I slice them small enough to run through my salad shooter with a grating blade on. Then I mix in enough eggs to make them stick together, add seasonings and spread them on a cookie sheet on wax paper. Throw them in the freezer until partially frozen and cut lines to break them into sandwich bag sizes squares. When fully frozen break into squares and throw back in the freezer. When I want to cook them I put them in the electric skillet on 350 until browned.

Yes Umpa, I brew beer. I planted three kinds of hops and a couple acres of barley.

This is too easy to be a great recipe, but take a pound of shredded cabbage, add a cup of Duke's mayo,a couple tablespoons of vinegar, zero to taste, about 8 drops for me, a teaspoon of celery seeds, salt and pepper and stir together and let sit for 3 or 4 hours. Then add enough Tabasco or Texas Pete to turn it slightly orangish. You'll be amazed at the flavor! It really isn't hot, just tastes good!

So far all I've planted was hops. I'll get in peppers, grape tomatoes, squash and pumpkins.  I want to try some cabbage too.

Ask Umpa / Re: Soy black beans
« on: January 27, 2014, 08:45:29 PM »
I'm going to make some chili for a deal at work next week with Eden black soybeans. They're about $2.89 a can at the local  health food grocery store. I like the black beans, they make things look normal, but I really don't taste any difference from regular yellow soybeans that you can pick up for $13.00 a bushel at the local grain elevator. For home use, I'd recommend plain old soybeans. Just plan on cooking them for a couple days and add some vinegar so you don't gas everyone out of the house. Makes great ham and beans!

If you don't have sour cream, a little ranch dressing will give it the same twang.

It's also a quarter of a pound. 4 ounces. 113.4 grams?

This is just a lazy version of Jalapeno poppers I started making. I used to cut the tops off the peppers, core the seeds out with  a spoon handle, put a drop of sf maple syrup in the bottom and stuff with a mixture of cream cheese, cheddar cheese and breakfast sausage. Then wrap with bacon and grill.  Now, I grill whole peppers, bacon and sausage, when they're done, throw in a pan with the rest of the stuff and put them back on the grill until the cheddar melts. Tastes just as good, and takes half the time.

Dinner Recipes / Re: What's your favorite Rabbit Recipe?
« on: June 28, 2013, 09:12:05 PM »
Wow! Doug and Tony, all three of your recipes look good! But I'm into more basic rabbit I guess. I think I've eaten a thousand or so of these tasty critters. My favorites involve frying in almond flour with salt, pepper and garlic mixed in. I love fried rabbit better than chicken by far. I used to fry rabbits and then  steam them with pineapples. That was really good. I need to figure something out to match that.

Good post Doug
