General Discussion / another "pearl"

I had to do that happy dance today, ;D ;D ;D as I got a blue jean dress out of my closet that had been too tight to wear and put it on to find it is actually loose now!  I was amazed, as I had felt a little discouraged lately. So made me so  happy!!!!  I called it another 'pearl' in my strand along this weight loss journey I am on. Just wanted to share it with you all.  Keep praying for  ya all!

I blew it ya all :'(
Weighed today and had gained 2 pounds it said. I had not cheated, but felt I have had too much cheese and too much sf products the last couple days.  So I was under some stress today and depressed about the weight gain, so I broke my fts diet for first time in 6 weeks.
Now I am sitting here feeling pretty sicky at my stomach, like eating carbs again really made me feel really  bad and nothing tasted good at all.
This I can guarantee you, I am going back on the FTS lifestyle in the morning. Pray for me.

General Discussion / ROSIE'S MOCK POTATO SALAD

I MADE A DELICIOUS CAULIFLOWER SALAD TODAY, USING MY MOM'S POTATO SALAD RECIPE. IT IS SO GOOD!

1     12 OUNCE BAG FROZEN CAULIFLOWER ( OR FRESH) 20 NET CARBS ENTIRE BAG.
3      BOILED EGGS sliced ( SET ONE ASIDE FOR LATTER) my eggs come from Kroger and they say 0 carb.
2      STALKS OF CELERY, DICED UP   3 NET CARB.
3 T.  DILL RELISH
1/4   CUP MAYO
DRIED ONION TO TASTE
SALT & PEPPER TO TASTE
PAPRIKA

Cook Cauliflower,drain, place in food processor and mash.   Place cauliflower in bowl, add 2 sliced boiled eggs,dill relish, celery,mayo, salt, pepper, onion, stir up.
Smooth up top, than slice the last egg and place neatly on top of the salad, sprinkle with paprika and chill.
Absolutely delicious ;D

I weighed in this morning, it will be 4 weeks on Monday since I began FTS. Today I have a total of 15 pounds off!!!!!!!   ;D ;D ;D ;D oh yes I am grinning big! SO HAPPY! That may not sound like much to others, but I am not able to exercise much like others can at this time,  so I think it is awesome.

I ran across this recipe today by Kim Bensen so I took it and made it into FTS one and oh  yum, I made one for me, my granddaugher and hubby we all loved it and topped it with readi whip.
here is the original one
 2 MINUTE MUG CAKE
3 1/2 T. CAKE FLOUR............ I USED ALMOND FLOUR
4 T. CANNED PUMPKIN
1 T.  POWDERED COCOA
1 T. EGG BEATERS.................. I USED 1T. OF REAL EGG
3 T. SPENDA
1/4 t. BAKING SODA
1/4t. BAKING POWDER
1/2 t. VANILLA
MIX ALL INGREDIENTS IN A MUG, PLACE IN MICROWAVE , IT TOOK MINE 3 TO 4 MINUTES TO GET DONE ENOUGH. GUESS IT DEPENDS ON YOUR MICROWAVE SO START WITH 2 MIN.

General Discussion / kinda quite

Hi all, everyone is being kinda 'quite' on here this week it seems.  I have had a good week, I will weigh on Sunday morning and sure that  I have lost some more pounds so can't wait! ;D ;D ;D
I turned 59 today, my goal is next year on my 60th birthday to have at the least 100 pounds off,  but of course I am praying for even more than that. ;D ;D  So keep me in your prayers as I want my life back and plan to fight hard to win this battle.
I have been on fts one month as of this coming Monday, and I am doing well, not tempted to cheat, not craving, just really awesome how I have been able to stick to the fts rules.
Sure is getting cold in my neck of the woods, time to turn on the furnace, as today is very chilly at 56 degrees right now. I love soup this time of year so plan to try to make some up when I have time and freeze it for when I need it as I guess there is not one can of soup of any kind on the market we can have.;(  If you know of any let me know or if you have some simple soup recipes.  We love mild chili too, got to find a good recipe for that and I cannot find the black soy beans anywhere does anyone know where I can get them?

General Discussion / DISCOURAGED;(

I  weighed this morning and much to my disappointment I gained 2 pounds. I wanted to cry than that old just give up and pig out feeling came over me, but thanks to all of you and the posts I have read these last few weeks I sat there in the kitchen for a few minutes than I said NO and I fixed my FTS breakfast.
As I had told you I had to go to the hills of old Kentucky yesterday for a big family reunion. I thought I did great, I was proud of my myself, I easily resisted much, but somehow what I did have had carbs. I had a deviled egg, chicken that I pulled the skin off of, and green beans.  I did accidentally pick up my husbands tea glass a couple of times and it was loaded with sugar. Also on way home we stopped in Arbys, I got a roast beef and cheddar, took it off the bun put it in a wrap, but it had some type of red sauce on it and I think it was probably sweet. Plus I nibbled on my SF candy on way there and home.  So whatever, something sure messed me up!
Fighting bad back pain last few days too, all stressing me out.
Going to spend lots of time on here today and regain strength, reading that post Jan had made that Doug posted on FB really lifted me up today plus all the comments that had been made. Thanks all.

GOOD FRIDAY MORNING TO YA ALL, BEEN ON HERE SOAKING UP MOTIVATION AND ENCOURAGEMENT ;D I will weigh in Sunday as Monday will start my 4th week and I am doing great ;D
Tomorrow I have to travel to Ky. for a big family reunion. I have plans to take things I can eat in a small cooler for in case there is nothing there for me, as I have my mind made up I am not breaking this FTS for nothing.
I got up with terrible back pain today, normally  for pain or depression  what do you think I do...yep eat and drink  a coke a cola.  My sister who harps at me all the time to loose weight even told me to have a coke a cola I would feel better, but NO... I had a club soda and some coffee and my breakfast and I am okay. I just plain refuse to let anything make me go back to my old ways.  Keep me in your prayers as I face that reunion and all that good old home cooking tomorrow... I must stay strong. ;D

Rainy old day in our neck of the woods so went in kitchen and tried to make an old family favorite pie crust recipe into a low carb one.  When it first came out of oven it seemed to crumble, but after I put the filling in it and it chilled for an hour and when we cut it all was well, cut great like any pie, family was thrilled with it.  I have no clue  how to tell you how many carbs in one slice, but I used the low carb products:
1-1/2 c. almond flour
1tsp. salt
1 packet of stevia
1/2 c. oil I used canola
2T. unsweet coconut milk
preheat oven to 425 degrees.   Put all dry ingredients into pie plate.  Pour oil and milk over dry ingredients, mix with fork, at first it will seem runny but keeping mixing till it thickens, than you can use the back of a spoon to smooth it in pie plate and up the sides of pie plate, than fingers work well for doing this neatly. bake for about 12 to 15 min, keep an eye on it. 
After it cooled I took
sf chocolate puddin, unsweet coconut milk, redi whip , mix it up and put into cooled shell, put in frig to chill. Family love it. My daughter just taught me how to reduce the size of pictures so I think this will work now.

General Discussion / my cauliflower soup

Umpa, you had asked about my cauliflower soup on one post but I cannot find that post now. I am not much on knowing how to do a recipe, but I took Doug's Squash soup recipe and kinda used that as a guide.  I took two 12 oz. bags of frozen cauliflower and cooked it than put it in the food precessor to mash.  Meantime on stove I had 3 T of butter melting, than added 4 c. heavy cream, 1/2 c. sour cream, 1/2 c. shreaded cheddar cheese and salt and pepper to taste, stirring often.... I added the mashed cauliflower to that and let cook another 5 min.  It may of been a little too thick but we loved it.  Do you think if I had cut the heavy cream in half and used some veg. stock it would of been better?  I always loved potato soup and my mom always put cheese in hers so this was the next best thing. True comfort on a cool rainy night.  Next week I plan to try some of the chili recipes you all have as we love chili, but not too spicey, my tummy cannot take too spicey.

General Discussion / made Doug's Italian stew

I made Doug's Italian stew tonight, Hubby gave it a '10' great he said!!!  I think next time I make it I will substitute cutting up chicken tenders to replace the sausage I think beef stew meat would work great too. Really tasted good on a cool rainy night. Thanks Doug. Problem is I think Hubby is starting to like me spending all this time in the kitchen cooking up new dishes hahahaha ;D ;D  He told me he was proud of me tonight for staying with this FTS for 3 weeks, as for sure I have not been able to stick with any diet this long for a long time, let alone go to parties and out to eat like we have lately and not touch nothing I was not allowed. So happy! ;D ;D ;) HOPE is a wonderful thing and FTS has give me HOPE of success!

Happy happy happy.... could not wait to weigh, was feeling like  I had lost more, so weighed today and yep 2 more pounds off, makes me a total of 12 pounds and yesterday was the beginning of week 3 on fts. yeahhhhhh ;D
Last night I made a low carb cauliflower soup it was so yum.  This morning hubby is home as we are on vacation, had planned to go to Smokies, but staying home, so I got up and fried the Jimaca, first time either of us had ever had it and we like it;)
I am so encouraged, never has a way of losing weight been so easy, so fun, so rewarding, thank God for FTS!!!!! You are all so wonderful on this forum too with all your ideals, recipes, and encouragement.

General Discussion / ANOTHER VICTORY- DAY 13

This is day 13 for me, I weighed when I got up, and had 4 more pounds off, so a total of 10 pounds off in 13 days... I am happy with that! ;D
We met family at Longhorn today to celebrate birthdays and anniversaries, potatoes and bread use to be my favorite foods, but today I had steak, garden veggies, of which I picked the pea pods and carrots out and gave to hubby and I had mushrooms, and a salad. I cannot believe it's me, amazing even myself, did not miss my bread or potatoes;) So yeah.
We decided to cancel our trip to the Smokies, as that gulf storm Lee is bringing lots of rain into that area this coming week they say. I do not like to go on a vacation and watch it rain, so now not sure what or where we are going to go or do for our vacation-anniversary.

Tonight we celebrated my son in laws birthday. They all had cake and pizza, chips and dip.  I made me a little pizza all my own with the low carb wrap, it was good, my hubby even said he like it as well as the other;) and I had absolutely NO DESIRE to eat the cake, none!!!!
This old girl is happy and my family are in shock haha

General Discussion / took my sugar

I have to share this. I am not diabetic,yet,  but my husband is, and I often tests my blood to see how I am doing, been pretty borderline and at times it has been high as 150plus but than the next morning I would take it when I got up it would be near 100plus.  This afternoon, after 10 days on fts program, my sugar reading was 86, I have not seen and 86  reading in 10 years, so wow what a blessing! ;D ;D ;D ;D ;D ;D ;D
