Vegetarian Recipes / Re: Italian Sausage Stuffed Collard Greens

I've never had collard greens.  I'll give them a try.  I would use cabbage leaves for this type of recipe.  I'm a northerner.

You are doing great, Morgan.  It is well worth the effort.

Back to basics is a good way to break the log jam.

Make sure to include your neck.  Mine really slimmed down but that might be a gender thing.  It isn't straight down from my ears anymore.

Ask Umpa / Re: High Altitude Baking
« on: January 28, 2013, 06:36:40 PM »
Siltz,
I live at altitude but haven't had any problem with my limited amount of baking.  The beanit butter cookies were flat and chewy but that's how I like them.

The coconut cake was perfect.  The flours are heavier than wheat flour and I think that helps.

When you are travelling you need to pay extra attention to getting enough water.  Get a reusable water bottle that you can fill after you get through security and keep track.  I'm not a fan of airplane bathrooms and am always afraid that the seat belt sign will be lit when I really want to use the facilities so I try to drink water around that schedule, but I usually fly shorter distances that NY to Las Vegas so take care to figure out how you can get it all in.

You are doing great.  I know the start was tough but hanging in there is paying off.

Since you aren't using a scale and don't want to take measurements, it's most likely that you are losing weight but the outward signs aren't going to show up for a while.  The first pounds lost aren't nearly as noticeable since they are a smaller percentage of your total weight.  When your pants start to get longer, you'll know you are shrinking.  They get longer before they get looser.  That's a great early warning sign of weight loss.
