Sides and Snacks / Cheese Puffs "Cheatos"

OMG I found this recipe and just tried making these - OMG were they ever good!

I added a little onion powder for a bit of flavour and didn't use the frozen cheese, just a 1/2 mixture of shredded Kraft parmesan (which I chopped finely with scissors) and the other half some grated packaged parmesan!

Let me know if you try them - this so satisfies my need for some cheesy crunch!

I don't know what anyone else thinks about Walden Farms, but I bought their BBQ sauce and I'm not a fan to be honest.  I also bought their variety pack of salad dressings, not too keen on the 1000 island one I tried last night - to me they have a very very strong artificial sweetener flavour that is not very palatable.

I had a nice sleep in today (its a holiday in Canada) and now I'm going to have Eggplant Parmagiana for brunch....cos that's what I feel like!

Congratulations Jo, that is wonderful news!
Why are you questioning it though?  Does it really matter?  You have obviously lost weight and inches, because your clothes are telling you!  I have lost 7.5 lbs now and I have already began to fit into one size smaller pants - that's just amazing for me!  I long to not feel like my clothes are too snug and if they are, it doesn't matter, cos I look smokin hot anyways!!!!! LOL

Ask Umpa / Xylitol packets or Maltitol liquid?

Hi Umpa,

I went to the local Nutrition House (health food store) where they have finally got some low carb goodies.

After my disaster with the mug chocolate cake (using Stevia - was gross), I thought I'd buy some Xylitol.  They only had it in powder form or individual packages. 

They also had liquid maltitol.  I thought that would be better for baking, but I wasn't sure if I'd read somewhere that it wasn't good to use liquid maltitol.

I bought the Xylitol instead - $7.99!!!!!!! for 50 packets, but not having a sweet tooth helps, so I don't intend to make too many goodies with it.

Can you use the maltitol or did I make the right choice?

Well done Teresa, that's fantastic!

I've lost another 2, which means 7.5 lbs loss for me, but my official weigh in is not till tomorrow, and I'll also do my measurements.

I'm thrilled with my loss, but I know it will slow down, but I am already feeling so much better, and that's worth a lot more to me than lb loss at this stage!

Yes, everybody is different.  I have always sliced my eggplant and let it "drain" on paper towel first, to remove some of the moisture and then grilled/panfried it before using it.  I have a feeling if you don't, the "skin" would be a little tough?  Its all personal preference.

I baked mine at 350 MommaB

I'm so looking forward to having some today....mmmmmmm

I just panfried it in a little oil, not water, but Umpa says she pan fried hers in water.

Once it was layered, I put it in the oven for about 30 minutes, until it was bubbling and brown on top

Seriously if you start eating the FTS way, food is pretty much the furthest thing from your mind.  I am not hungry at all, just stick at it, it will get easier.

LOL that's what I was thinking!  I had dry cooking sherry maybe once in my cupboard at home in Australia, only because I think one chinese recipe called for it.

I think it would probably be just as good without it?  There's probably enough flavour in the cheese and mustard.  Just my thought on things....

LOL what would I know, I already messed it up once!!!!!

In my defence, I didn't realise that the shredded mix of cheese I used had mozzarella in it...that's my excuse and I'm sticking to it!!!
