Hi Mark  :)  I've used a couple of different cheeses.  Typically any that you like would work, just know that the harder cheeses work the best though.  The softer ones like Mozzarella turn out a little chewy.  I've used shredded Cheddar, Parmesan, Parmigiano-Reggiano, Havarti, Pepper Jack, Provolone and Mozzarella in various ways.  They make great chips for dipping too.  ;)   I have to say my favorate go to cheeses are the Provolone (very mild flavor so goes well with most things), Parmesan (comes out crispy every time) and Cheddar (just because I always have it on hand and who doesn't like Cheddar  Haha)   So many cheeses and so little time   ;D ;D ;D

Same here  :)  You might keep your eyes open though.  You would be surprised where you might find it.  One of our local feed stores has it fairly inexpensive.  I was even surprised to see that they carry some nut flours as well.  I live in a fairly small town so to find these items in a place like that.  Very surprising.  Haha
