Desserts and Sweets / Liquid vs. Powdered Sweetener in Baking

Umpa,

I have been looking at some recipes that call for both liquid sweetener (stevia) and powdered sweetener (erythritol). When a dish I am cooking calls for sweetener, I usually just use a few drops of zero.  However, I have always told that baking requires exact measurements of ingredients.  Grandma always said that in baking you need to follow the recipe exactly.

Since you are the low carb baking guru I wanted to run this by you.  When a recipe calls for both kinds of sweeteners, can I just use the liquid?  Also, since different sweeteners taste more or less sweet than others, how do you adjust the amount from say, liquid sucralose to liquid stevia?  Thanks.

Ask Umpa / Mayo recipe

Hello all.  I see plenty of recipes that call for using mayo, but I couldn't find one for mayo itself.  Does anyone have a homemade mayo recipe they really like?  Thanks.  Also, when making mayo, what are the pros and cons of different oils.  I was going to use olive oil rather than vegetable oil or canola oil.  I like using coconut oil, but I don't think the coconut taste would be good for mayo.  Thoughts?

Hi FTSers.  Been away from the forum and away from FTS for a while now.  I fell off the wagon (so to speak) and bounced all over the place (my weight that is).  Tired of feeling tired.  Tired of clothes being tight.  Tired of being FAT (there, I said it).  So, I am here committing to get back on track.

General Discussion / Pumpkin Soup Recipe?

I am planning my food for Turkey Day and would like to add a pumpkin soup.  Does anyone have a FTS friendly pumpkin soup recipe they can point me to?  Maybe an autumn squash recipe would be good too.  I have a couple of cans of pumpkin puree (not the pie filling).  I figure I could start by opening one, adding some water, heavy cream, and some spices and it would probably be good.  But I know you guys could tell me how to make it great.

It's time to once again make pumpkin everything.  I have been looking at all of the wonderful pumpkin recipes from years past.  There are recipes for pumpkin pie, pumpkin pancakes, pumpkin soup... just to name a few.  I love this time of year.

General Discussion / low potassium

My doctor said my Potassium levels are a bit low.  He recommended bananas, sweet potatoes or yellow squash.  These don't really work with FTS, do they.  Should I just get a supplement, or do you guys have suggestions of high potassium FTS friendly foods?  As always, thanks.

General Discussion / Tracking Carbs

OK, it is time for me to start seriously tracking my carbs.  I was wondering if anyone has found a good website or app for doing this.  Most of what I have found is focused on tracking calories not carbs.

I know I can use paper and pencil, but my smartphone is always on my hip, and I don't usually carry paper and pencil with me.  Therefore I would like something that I can bring up on my phone and enter my meals.  I know you guys are good for some awesome suggestions.  Thanks.

I found, in Walmart of all places, several flavors of the Torani Sugar Free flavored syrups.  I love the flavors.  Obvioulsy, when it comes to flavoring my coffee, or over CarbSmart ice cream, I use the syrups.  I know the extracts contain alcohol, and they don't taste very good straight up.  My question is when cooking or baking, when is is better to use a extract (i.e., vanilla) versus the flavored syrups?

General Discussion / Taking measurements

People here often recommend that we take measurements in addition to using the scale.  You say that often when the weight isn't decreasing, the measurements are.  OK, I can understand that.  My question is (and I am sure it is slightly different for men and women) where do you measure?  Waist? stomach (belly button)? hips? chest? biceps (flexed or relaxed)? neck? thigh? other?  Do I need to measure all of these or are some better indicators than others?  I purchased a fitness tape measure just for this purpose.  I can't wait to hear your recommendations.

Sides and Snacks / Homemade Protein/Snack bar

Several people have mentioned in various posts that they make their own protein or snack bars.  I have been buying the Optimum Nutrition protein bars. They have only 1 net carb and 20 grams of protein per bar.  They are ok tasting, IMHO.  However, they do have 22g of sugar alcohols per bar.  My favorites, Quest Bars, have 3 to 5 net carbs per bar, and also have lots of sugar alcohols.  I am looking for something portable.  Something to take with me to work for that mid-afternoon snack, or in the car on trips so that I don't eat "bad" snacks.  I tried to find recipes here on the forum, unsuccessfully.  Can anyone point me in the right direction?  Thanks.

General Discussion / Low Carb Pasta Sauce

I was in the grocery store last night and I wanted to get some pasta sauce to use with my miracle noodles as well as my pork rind chicken parm.  Anyway, I must have looked at more than 50 jars, from store brand to gourmet ($7.99 per bottle), plain, flavored, marinara, pizza sauce, organic... every conceivable kind.  The net carbs per serving ranged from 4 to 14 grams.  Of course the lowest carb count was in the most expensive sauce.  Even the plain "pizza sauce" had 5 net carbs.

I tried the Walden Farms sauce, and found it inedible.  I was never a fan of sweet tomato sauce, so it amazes me how much sugar companies put in their sauce.  I never made my own "gravy" (as my Italian friends call it) before, but I am thinking that might be the way I have to go.  Can someone please recommend a good, low carb pasta sauce?  Thanks.

General Discussion / Kids and Artificial Sweetners?

Hi all.  I know how family oriented the people here are so I want to get your opinions.  So far I have been cooking separately for myself and my family.  The primary reason is that I have young children (five and ten) and I am concerned about feeding them foods prepared with artificial sweeteners (Sucralose, xylitol, stevia).  I realize that feeding them sugary food isn't healthy, so I have cut their sugar intake significantly by cutting out sweets.  I am willing to switch to sweeteners for myself, but I am unsure about the safety of artificial sweeteners for them. Your thoughts would be greatly appreciated.  Thanks.

General Discussion / Chinese Restaurant - please help

My office is taking someone who is retiring to a fancy Chinese restaurant.  I can't not go.  However, I haven't really tried ordering in a restaurant since starting FTS.  What can I get that is low carb?  I realize that most of the sauces are off limits, as are noodles, dumplings, and egg rolls.  I love spicy Chinese food, but I am afraid I am only going to be able to order steamed chicken and vegetables.  Any suggestions would be most welcome.

Happy Halloween  The kids are downstairs stuffing sugar into their mouths.  I figured I would come upstairs and read FTS.  It is so hard not to dig in.  Anyway, I hope the rest of you are enjoying the ghouls and gobblins, witches, ghosts, princesses, fairys and all the other wonderful characters wandering the streets.
