Hi guys - I know, I've been gone for a very long time.  I can honestly say now that I am living proof of how well this way of life works.....  I stopped, I thought I'd be ok.  I was wrong wrong wrong.  I am now back up to where I started.  Sick, tired and no enjoyment in my life.  :(   I begin over today.  Excuses are like a**holes (pardon my French), everyone's got one.... I'm not going to make excuses, I'm going to move forward.  I got back on here yesterday and was thrilled to see so many people had made their goals!  Thank you all for being here always... I'm trying to not tear up right now - putting this into words is really hard for me to do.  I don't take failure from myself well.

Ask Umpa / Sweetener substitutions

Hiya Umpa!  I'm thinking of playing with some of the recipes in the bakery book but have a couple questions.  You use Xylitol almost exclusively in your baking.  What would you recommend as a substitute for that?  I'm trying to cut back on my Splenda usage and am eagerly awaiting my FTS sweetener.  However my husband is incredibly sensitive to the Xylitol and any little bit causes him rather major intestinal upset!  Is there a way to substitute in stevia instead?  If so, what do you think the ratio would be?  Thank you!

  Hey guys.  So I'm not really sure what to say or how to say it.  I went to the doctor today to get checked out because I had chest pain Thanksgiving day, bad enough to make me think I should get it checked, not bad enough at the time to be more than just somewhat worried.  Well, apparently I had a cardiac infarction - that would be doctor talk for a minor heart attack.  WTH?! 
  I'm scared, I'm kinda mad, I'm frustrated.  I've been busting it since March, I've lost almost 40 lbs, I've lowered my cholesterol by 61 points, I'm not prediabetic anymore.  I'm fricking 36 years old!!  And I had a heart attack?! On Thanksgiving day?!
  I don't even know where to go from here.  I have tests scheduled all week; I have a follow up appt with my doc in 2 weeks.  Thanks for letting me vent.

Hey TooSweet - I did some searching for BBQ sauce recipes after seeing yours - see what you think of this one!
1 - 6oz can tomato paste (20gm)
1/3 c Splenda (8gm)
1/4c finely chopped onion (4gm)
2 Tbsp Worcestershire Sauce (0)
2 Tbsp Chili Powder (0)
1 tsp black pepper (0)
2 tsp smoked salt (0)
1 Tbsp apple cider vinegar (0)
juice of 1/2 lemon (1.5gm)
1 clove garlic, chopped (1gm)
1 squirt mustard (0)
Water to thin out (I used about 1-1/4 cups)
Combine all ingredients in saucepan and simmer until onion is soft and flavors are combined.  If you like chunky, it's good to go!  I pureed it smooth.  Also, the smoked salt can be hard to find - I get it at my work; you can probably just use liquid smoke, I just don't know the numbers for it.  This is a fairly sweet sauce, you can tweak it with less sweetener or more heat.  It comes to 34.5 gm carbs for entire recipe - mine made 2 cups (16 servings @ 2Tbsp per serving = 2.16gm per serving).  I know you can cut that way down just by switching out the Splenda with Xylitol, but my husband can't tolerate the Xylitol.  I think next time I am gonna try it with Stevia instead.  Enjoy!! ;D

Hi all, just wanted to tell you that I greatly appreciate all the support and help from everyone here.  I may not be commenting often here for a bit, I will still be checking in and sending good thoughts to everyone.  We are going through a very difficult and stressful time in our family right now and I need to focus on them right now.  I know you all will understand.  Thank you all.

Ok everyone, I've started cleaning out my cabinets today to get rid of all my sugar. Yes, 3 weeks after starting, but my husband just got on board this week so I hadn't taken anything out. My question to you all - did anyone else have a little mini panic attack about how empty everything is?! :o  Freaking out a little!

Girly Girl Talk / Xylitol Side Effects?

So, I was wondering if other people have the same issue with xylitol as I do?  Everytime I've used it (usually in my coffee) it gives me really loose stools.  I was wondering since it's used in so many recipes here in the desserts if that decreases if it's cooked with?  It affects my husband the same way.  Or does your body get used to it?  I'm kinda not complaining, it fixes the other problem I've been having since I started my new lifestyle (constipation). :P  Just wondering about everyone else's experience with it.

Ask Umpa / Turkey Soup

Hi Umpa,
  I'd love your input on my soup I made this evening.
     Boiled down 1 turkey carcass and picked clean bones (about 1-1/2c meat) then used the broth for the soup.
     1/4 large onion, finely diced
     3 celery stalks, sliced
     12 oz sliced mushrooms
  I coarse grated about 1/2 a small zucchini into my bowl and poured the soup over it.  This made easily 4 servings, maybe more.  Are there any suggestions you can make for lowering carbs?  I know onions are higher, but I think the flavor is important and I didn't use very much.  Oh yeah, and it tasted fabulous since here in Colorado we went from 84 yesterday to 32 today! ???  Gotta love spring in Colorado!

Ok so big high to big low.  Pht. :(  I just got back from my doctor's appt this afternoon, and what wonderful results he had to tell me.  NOT.  So 35 years old and my bad cholesterol is 220, good is 57.  I am pre-diabetic.  What exactly does that mean?!  Does that mean it's not bad enough for medication...yet?  Ugh.  And I think the part that made me the most mad is that according to their scale I only lost 2 LBS.  Double UGH.  I'm just frustrated, and kinda a little scared.

Wow, I don't think I can complain at all!  I lost 5.2 lbs my first week here!  That is so awesome!!!  In the past I would be doing good to hit that in a month of starving myself and killing myself at the gym!   YAYYAYYAY!!  ;D ;D ;D

Not sure if this is the right place for this... My one big thing is always flavor.  And the best, low carb way to add wonderful flavor is to spice it up!  Anyone who feels this way, please check out www.savoryspiceshop.com.  I work for this company here in Denver; it is owned by a family here.  We grind and blend most everything ourselves.  Yes, some of the blends have sugars - honey powder, white sugar, brown sugar or maple sugar.  A few have a little arrowroot in them.  But the website lists all ingredients for each blend so you can find lots that don't have those in them.  We have over 140 blends and over 400 products altogether.  The freshness is the key! Did you know cinnamon is usually only potent for about 6 months?  We sell all our products in as small as 1/2 oz bags, up to lbs.  There is no MSG or artificial ingredients in any of our products.  I hope you all enjoy!  When I first found this place 6-7 years ago I thought I'd died and gone to heaven!

Hi all!  New to the site, new to the book.  I just switched doctors and my new doctor strongly recommended I check the book out.  I am intrigued, and more importantly, it makes sense to me!  I am trying to get my low carb options in place before I start, hoping that helps with my transition.  I've been reading here and there in the community and have to say I am amazed!  I've never seen such an active community with such a strong support system in both the people posting and the moderaters.  Doug and Umpa I'm looking forward to having lots of silly questions (that you've probably answered a hundred times)!  Thank you to everyone!  I can do this!

Hi all.  I am trying to have my low carb options in place before I get started (hoping it helps with the transition!).  Searching carbsmart.com I came across Dreamfield Pasta. Supposed to be 5gm "available" carbs?  Any thoughts?  Thank you!
