Had a wonderfull lunch with the leftover food from the Mexican Fiesta!

Mixed the enchilada filling with the rest of the beans (black soy) and heated it all up in the microwave....made a nice green salad, put a little ranch dressing on the greens then a handful of pork rinds then the hot meat and bean mixture then some grated Jarlsberg cheese which melted nicely  ABSOLUTLY delish and filling...nil for carb count  The rinds get soft pretty quick so eat the ones in the salad first then have a few "scooper's" on the side!

hi Phil :) the sauce is La Victoria and the beans were Eden brand...most "yuppie" food stores like Whole Foods carry them on the shelf as do many health food stores.

You can order the black soy beans online (maybe Netrition?). I found them as I traveled this summer, stopping at health food stores along the way.

I made some quickie enchiladas  the other day with pre-cooked store bought turkey breast, alfredo sauce and pepper jack cheese, I thought I had died and gone to Mexican food heaven.  Can't wait to try these.  Love the low carb tortillas.  :D

So, what was the carb count for that entire meal? Seems like a lot of food. I miss Mexican.

Hi Rena, around 10 for the entire recipe depending on the serving sizes for rice, beans and sauce. We cut the tortillas in half to cut even more carbs.

Thanks, ShihTzumMom! We've done that for quesadillas and chips. We're going to make enchiladas soon, but probably not the cauliflower rice or soybeans. I'd like them, but no one else would and I'd hate for them to go to waste.

Yeah, I'm pretty sure. I'm the only one out of a family of 6 that even likes beans. One of my girls likes refried beans, but that's about it. Rick HATES beans or peas with a passion. "They're too mushy!" He's such a baby. I know I'd like the cauliflower rice, but not sure about Rick. He's not too fond of the cauli-mashed, although I love it. To me, it's more about the texture, but for him it's all about taste.

I looked for soybeans the other day but only found the green ones in the frozen section. Are yours canned? I didn't even look in the canned section. I'll look again or order some online.

We're making enchiladas tonight, though! :)

When i make chili with the black soy beans i put them in with the raw meat so they have a chance to soften up.make sure you cook them long enough. ;)

Making your chili in the crock pot so they simmer all day also works great.

Doug and Umpa, I just want to thank you for all the great recipes!!! I am new to the Fat and Skinny family (I started my life change in March; gave up foods that turn into sugar in the body for Lent) and I probably would not have made it thus far w/o all of your great ideas. My mom found your book in the Library and lent it to me. Your book taught me and inspired me to make the change to save my life. My mom is also making the change!! I am tearing up while I type this b/c it just means so much to me. I am down 60lbs and have 120 to go . I am just concentrating on putting one foot in front of the other to get to the goal line. It's not about how long will it take for me anymore, it's just about being healthy from here on out. Also, I am really looking forward to making this yummy looking dish!!!

Thanks to everyone for the kind words and support. Umpa, have you tried to make pasta using Soy flour? I really miss mac and cheese but cannot , for the life of me, get my head wrapped around tofu. I have not used soy flour yet, so I do not know if it will work.

The problem is the soy flour falls apart when it hits the boiling water ;) I just bought a additive and will be experimenting with pasta again for my new cookbook.(I am a mad scientist at heart! :D)What type of pasta are you looking for?Did you find Ask Umpa?

I love that you are a mad scientist...you get to experiment (and have fun) and we get to enjoy the good food you create :) :) Can't wait for the cookbook!!!

I was just hoping to have a macoroni, or shell, type pasta for mac_n_cheese. I hope your experimenting works, but if it doesn't I know I'll be okay. Going without real mac_n_cheese is such a small sacrifice when I look at the big picture. I do not feel deprived at all!!!!

I just found this video today.  There's a heck of a lot of food on that mexican plate... I will be making this dish over the weekend.  (The laptop on the counter as I follow the video  ;D )

I did make this dish, however, I think the tofu was too soft b/c it was way to mushy in my mouth. Maybe I should try it again with really firm tofu and smaller pieces. I do agree with you that tofu has no taste really, it is the texture that's got me not wanting to ever it tofu again...but I will try :)

Use xtra firm tofu and use shallow baking dishes so you get a crunchy top..... don't be afraid to use a heavy hand with your fav cheese, Yum!
