Title: Salad w/ Blue Cheese and Pecans sautéed in bacon fat

Cleaning out the fridge and burgers were the meal of choice.  So I cooked bacon and pulled out some iceberg lettuce and blue cheese crumbles (Salemville Amish brand has 0 carbs).  When the hubby called to say he'd be an hour late - I was already hungry so made myself a quick iceberg salad - topped with blue cheese crumbles and checked the freezer for what else I had - ah ha, pecan pieces.  So I toasted the nuts in the rendered bacon fat and once done, topped onto the salad.  Used Macadamia Nut oil and Champagne Vinegar for the dressing.  Worked out to be a delicious salad!
