We have a request for more vegetarian recipes on the forum.I am holding a contest until October 31.The winner will get a free book.(you can keep for yourself or give as a gift.) You may pick any of the Dougs 5 books you would like.
Just post your vegetarian recipes on this board and doug will choose one on the Oct.31.

CHILES REYENOS

Ingradients

2 poblano pepers
2 eggs
2 cups of mozzarela cheese (around that Im not sure on the measure)
1/2 cup of soy flour (not going to use it all)
Oil don't know how much enough to fry


Directions
The peppers are roasted and after that  place them in a seeld plastic bag and leave them rest for 5 min.
Then skin is removed, seeds and veinsat the same time rinsed with water.
The peppers are then stuffed with cheese and closed with the aid of a stick, then sprinkle the whole pepper in the flour.Beat the egg whites until stiff and then add the yolks and continue beating in a separate bowl. Place the oil to boil in a pan, floured chiles are passed through the egg and then put frying turning then to be fried on all sides.


Tip: I usually put like a station first the stuffet pepper in a plate then the second  would be the flour in a plastic container and the las the bowl with the eggs and then the pan with the oil.


Serve with the coliflower rice and  black beens....

Here is something I tried at Whole Foods in Annapolis on Monday, but I haven't tried to make it yet.

Grill long pieces of sliced eggplant. Place a mixture of ricotta cheese and seasonings (I tasted some cinnamon) on a slice and roll it up. It will be like stuffed shells at this point. Place them side by side in a baking dish. Add tomato sauce and top with Italian cheeses. Bake at 350 until cheese is melted on the top.  It was delicious!!!!

I think I calculated these carb totals correctly.  But here is my submission for the vegetarian recipe contest.

Pecan Meatballs with Sweet and Sour Sauce.

1/2 cup grated Parmesan cheese = 1.6 carbs
1/2 cup ground pecans = 14.0 carbs
1 cup ground pork rinds = 0
1/4 cup minced onion = 2.95 carbs
1 egg = .6 carbs

Mix all ingredients and make into small meatballs (approx. 25).  Brown in skillet with a little oil or non stick spray.  Remove meatballs from skillet and set aside while you make sauce.

In same skillet you fried the meatballs, mix together
1 cup frozen pineapple juice concentrate (diluted 3 parts water) = 12.77 carbs
1/2 cup water = 0
3 T cider vinegar = 2.7 carbs
1 T soy sauce = 2.0 carbs
Xylitol or stevia to taste for desired sweetness
Scant  1/4-1/2 t xantham gum to thicken = 0

Once sauce has thickened, add meatballs to sauce and simmer until heated through.

Serves 4 = 9.15 carbs per serving

You can add steamed green peppers, water chestnuts, bamboo shoots, celery, bok choy, broccoli, whatever vegetables if you would prefer a one dish meal.

okay friedpie this is wicked cool, I gotta cook this one.Can you use sugar free teriaki instead of pineapple juice?Since you are using vineager for the sweet and sour thing.It would reduce the carbs by 9. :)

Aren't pork rinds the skin of pork, fried in lard (pork fat).  I don't think a vegetarian would eat this.  It also seems like a lot of carbs for just part of one meal.  You would still have to add your veggies etc.  For those trying to stay between 10 - 15 carbs per day, it would be all used up just for this.

You are correct  but the pork rinds are not required,neither is the pineapple juice.The pork rinds can be replaced by the Now unblanched almond flour(its only 4 carbs a cup) .It has a similar consistency as pork rind flour.What is cool to me is using the nuts to make meatballs.But you are correct Shihtzmom.
I started this contest for our people on the forum that are vegetarian and can't eat soy because they are breast cancer survivors.So I have total faith that you will all throw your ideas up here and see what sticks.Some vegetarians eat eggs and fish.I appreciate you all helping me contest, so post away!! :)

Well crap!  The original recipie called for cracker crumbs and cornflakes, so I changed that to porkrinds.  That will not work for vegetarian.  But the meatballs are the bomb.

It would be way great with Umpa's suggestion to change the pork rinds to almond flour and would really reduce the carbs if you changed to the SF Teriyaki sauce instead of the pineapple juice like she said.  Sounds like a great recipe.

This is my official entry.
Cheesy Turnip Casserole.
one pound of turnips (4c) (20 carbs)
1/2 cup melted butter(mix together)
Mix 1/4c onions (2.5carbs)
1pt sour cream
1 can cream of mushroom  soup( make your own)
6oz. grated cheese (0 carbs)
1 tsp salt
1 tsp pepper
Mix with turnips and put in greased casserole dish
mix together with 2c crushed pork rinds(optional)
1/4c melted butter
sprinkle pork rind/butter mix over turnips
bake @350 45-60 minutes!
30.5 carbs total makes 12, 2.5 carb servings!

Here is my entry for the contest.  The original called for canned pork & beans, chili sauce, molasses & brown sugar.

EASY BAKED BEANS

2 cans black soy beans, drained (approx. 3 1/2 cups = 7 net carbs)
1/4 cup salsa (mine was 3 net carbs per 1/4 cup)
1/4 cup pasta sauce (mine was 4 per 1/2 cup = 2 net carbs)
2-3 tblsp. SF maple syrup = 0
2-3 tblsp. SF honey = 0
1/2 small onion sliced (approx. 1/4 cup = 2.5 net carbs)

Spray casserole dish with Pam.  Add all ingredients except the onion and stir well.  Lay the sliced onion over top.  Bake in a 350° oven for 2 1/2 - 3 hours.  The onion should be well cooked and most of the juice should be cooked off, but not dry.  I have only made this once so I have not perfected the cooking time.  Makes approx. 4 cups.  My net carbs came to 14.5 so that would be 3.625 per 1/2 cup serving.  (You could probably find salsa & pasta sauce with fewer net carbs).
**Note:  For those who are not vegetarians, you may want to cut 1 or 2 slices of bacon in 1 inches pieces and lay over the onion before baking.  The bacon should look cooked when your baked beans are done.

Zucchini Hummus

1 1/2 cups raw zucchini, peeled and chopped   (3.3 carbs)
2 tbsp raw tahini            (5 carbs)
2 tbsp lemon juice            (2 carbs)
2 cloves crushed garlic         
1 tbsp olive oil               
1/4 tsp ground cumin            
1/4 tsp paprika               
1/2 tsp salt               

Put all ingredients in food processor or high speed blender and blend until smooth.

Dip for cucumber slices, celery, or other low carb veggies.
Can also use it as a spread for lettuce rollups with your favorite deli meats.


Makes about 2 cups 11 carbs total or 2.75 carbs per 1/2 cup serving

Tahini is sesame seed paste. You can buy it already made or make it by grinding raw sesame seeds and a little olive oil into a paste. Might be able to replace it in the recipe with a tablespoon of Vegenaise??

Mock Curried "Egg" Salad - (No cholesterol either)

1 package firm or extra firm tofu (drained for 1-2 hours)  (6.3 carbs)
2-3 tablespoons Grapeseed Oil Vegenaise  (2 carb/1 carb per tbsp)
3 tablespoons finely chopped celery (or to taste,) (1.7 carbs)
2 tablespoons minced onion (or to taste) (1.7 carbs)
2 tsp Curry powder (to taste, I used one tablespoon)
Himalayan or Real Salt to taste,
Pepper to taste

Instructions
Remove the tofu from the container and rinse in cold water. Then wrap in paper towels and place in colander with a heavy pot on top to press out most of the moisture.

Drain and mash tofu, mix in remaining ingredients.
Eat as is, stuff into celery, or wrap in romaine or collard leaves.

Makes 4 servings – 11.7 carbs for entire recipe, or 3 carbs per serving (adjust carbohydrates if you use more celery and/or onion).

Caponata (personalized Adkins Recipe)

Ingredients:
1/4 cup extra virgin olive oil
1 medium eggplant or 2 Italian eggplants (about 12 ounces), peeled and cut into 1/3 cubes
1/2 red bell pepper
1/2 small onion, finely chopped
2 large cloves garlic, pushed through a press
1/4 cup water
2 tablespoons fresh lemon juice
1 teaspoon salt
2 tablespoons drained capers
4 ounce can black sliced olives (drained)
2 tablespoons chopped fresh Italian parsley leaves
 
Directions:
In a large saucepan, heat olive oil over medium heat and add the eggplant, bell pepper, onion, garlic and water and bring to a boil. Cover and simmer until eggplant is tender and most of the liquid has evaporated, about 15 minutes. Stir occasionally. Mix in olives, lemon juice, salt, capers and parsley. Cool to room temperature and refrigerate. Serve as antipasto.

6 servings - Nutritional Information
Per Serving: Net Carbs: 4.5 grams, Fiber: 1.5 grams, Protein: 1.0 grams, Fat: 9.0 grams, Calories: 102

Shirataki Fettuccine Alla Carbonera (serves 1 or 2)

1 pkg Fettuccine Miracle Noodles (or House Foods Shirataki fettuccine noodles) (0 carb)
1 wedge Laughing Cow Garlic and Herb Cheese wedge (1 carb)
1 oz cream cheese (.8 carb)
1/2 oz white wine (0.6 carb)
1 tablespoon sour cream (0.5 carb)
1 Tbsp grated Romano cheese
1/2 cup mushrooms sauteed in butter or olive oil) (1.2 carb)
2 tablespoons black olives (1 carb)
*1 strip Morningstar Bacon Strips fried crispy and crumbled (0.5 carb)
chopped Italian parsley

Prepare fettuccine noodles as per package, dry thoroughly and set aside.
Fry 1 strip of Morningstar bacon until crispy. Crumble and set aside.

In a small saute pan melt the Laughing Cow garlic and herb cheese wedge with the cream cheese and 1/2 ounce of white wine. When melted add Romano cheese and sour cream. Stir constantly to thicken it up a bit and cook the alcohol out of the wine.

Fold in the fettuccine noodles, mushrooms and olives. Heat thoroughly.

Plate the noodles and sprinkle with the bacon crumbles and a sprinkle of chopped Italian parsley.

Serves one at 5.6 carbs or serves 2 at 2.8 carbs per serving.
*(if making 2 servings increase bacon strips to 2 strips increase carb by .5)

BASIC FLAX CHIPS
2 cups golden flax seeds
1- 1 1/2 cups filtered water
2 tablespoons fresh lemon juice
1 teaspoon Himalayan or RealSalt

Mix well and soak for 2 hours. Spread flax mixture onto teflex dehydrator sheets. Score the crackers into the sizes you wish to help break them apart when dried. Dehydrate for 10-13 hours at 105 degrees. (Could bake them in the oven as well at a very low temperature).

The basic recipe will have no carbohydrates per cracker.

Another option is to coarse grind 1 cup of flax seeds and mix them into the 2 cups of whole seeds.
To this you can add:
Minced garlic
Minced celery
Minced sundried tomatoes
Chopped green olives
Various seasonings (chili powder, cumin, basil, oregano, rosemary, thyme, Parmesan etc)
Adjust carbohydrates accordingly to additions.

Tuna Ceviche
12 ounces sashimi grade tuna (raw)
4 medium green onions, thinly sliced (2.8 carb)
2 teaspoons minced fresh ginger root (0.8 carb)
1 fresh jalapeno pepper, seeded and minced (3.6 carb)
1/4 cup lemon juice, or to taste
1/4 teaspoon soy sauce, or to taste

Directions
Cut tuna into 1/2 inch cubes, and place into a bowl. Stir in the onion, green onions, ginger, jalapeno, lemon juice, and soy sauce; mix to combine. Cover and refrigerate for 2 to 3 hours. Taste before serving and add more lemon juice or soy sauce as needed.

Makes four 3-ounce servings at 1.80 carbs per serving.
If used to make ceviche tacos or tostadas then use 2 ounces per serving at 1.20 carbs each for six servings.

Marinated Tuna (Sicilian Style)

Two pound portion yellowfin Tuna, cooked whole (boiled in water and drained)
1- 1 1/2 cups red wine vinegar
1/2 cup virgin olive oil
1 medium purple onion sliced in thin rings  (9.6 carb)
4 cloves finely chopped garlic - more is better  :D  (3.7 carb)
3-4 medium ribs celery sliced thin or chopped  (2.8 carb)
3 tablespoon cayenne pepper flakes (4.1 carb)
1  teaspoon Stevia or Xylitol (optional)
Himalayan salt, RealSalt or Kosher sea salt
Coarse ground pepper
Chopped Italian parsley

Boil tuna in water just until cooked but not falling apart. (Cooks very quickly). Seasonings (bouquet garni) can be added to the water, but not necessary. Drain and discard water. Cool the tuna and refrigerate for one hour.

When tuna is cool, remove skin and bones from the fish. In a large bowl combine tuna broken into large pieces, with onion rings, garlic, parsley and celery. Mix lightly.

In a small bowl mix vinegar, oil, sweetener if used, cayenne, salt, pepper, mix well and pour over tuna. Mix well being careful not to break the tuna apart. Marinate 6 – 12 hours in refrigerator. Turn every few hours.

Total recipe 19.6 carbs, 10 3-oz servings at 1.96 carbs per serving.

I didn't realize there was a contest, so I posted this on a separate thread. I guess it fits the vegetarian requirement for the contest, so here it is again:
Broccoli-Cauliflower Salad

1 cup canned black soy beans  2 carbs
1 cup small flowerets raw broccoli   3.5 carbs
1 cup small flowerets raw cauliflower  2.8 carbs
1/2 cup green onion chopped   2.4 carbs
1 cup cubed feta or swiss cheese  0 carbs

Dressing:
1/3 cup olive oil  0 carbs
3 Tbsp vinegar  0 carbs
1 tsp minced garlic   1 carb
1 tsp dried tarragon leaves
1/2 tsp salt
1/2 tsp dry mustard
1/4 tsp black pepper
splash tabasco sauce

Mix salad and dressing, place in covered bowl. Allow to marinate in frig for several hours.
Total carbs 11.7
Makes 8 servings. 1/2 cup serving has 1.5 carbs

I don't know how much you have read on this contest,but the purpose was to get recipes for cancer survivors that are vegetarian that can't eat soy.To give them more ideas and help them stay on the plan.We are missing these type of recipes in the recipe section. I really liked your turnip recipe! :)

Broccoli with garlic and asiago.
Steam cook broccoli til bright green.
1 clove garlic sautee with olive oil
toss broccoli with garlic and oil melt shredded asiago on top and serve!

I have no fancy name for this lol kids named it  ;)

Accidental soup

15 oz. tomato sauce
4 roma tomatos
green chiles
1/2 cup green pepper strips
1/2 cup slice onion
2 small zucchini
2 small yellow squash
2 Tblsp parsley

mix it all together and cook 20 - 30 mins til zucchini is done (and yes even the pickiest ones liked it)  not sure on carb levels tho sorry but i know its 6 - 8 servings

This is my official entry.
Cheesy Turnip Casserole.
one pound of turnips (4c) (20 carbs)
1/2 cup melted butter(mix together)
Mix 1/4c onions (2.5carbs)
1pt sour cream
1 can cream of mushroom  soup( make your own)
6oz. grated cheese (0 carbs)
1 tsp salt
1 tsp pepper
Mix with turnips and put in greased casserole dish
mix together with 2c crushed pork rinds(optional)
1/4c melted butter
sprinkle pork rind/butter mix over turnips
bake @350 45-60 minutes!
30.5 carbs total makes 12, 2.5 carb servings!
Beebs, I am going to make this today but wasn't sure what I do with the turnips.  Do I boil them first and mash them, or shred them, or cut them up, or put them in raw?

Cheesy Kale Chips
(lower carb than vegan recipe)

Preheat oven to 375 (or can dehydrate for 8 hours in dehydrator at 105 degrees)

Ingredients:

2 bunches kale, either curly or dinosaur (lacinato)
1 large red or yellow bell pepper (seeded and chopped)
1 large stalk celery
1/4 cup fresh lemon juice
Himalayan salt (optional).
1/2 cup freshly shredded Parmesan cheese
1/3 cup flax seeds or sunflower seeds (if using sunflower seeds, be sure to soak
                                                    them for 2 hours before using to make
                                                    them more digestible)

Directions:

Remove the spines from the kale either by tearing down both sides of the spine, or cut with a knife. (Save them to make soup, put in salads, or compost)

Wash the kale very, very well and dry (salad spinner works great).
Tear into large pieces about the 7-8 inches in length and put into a large bowl.

In a high-speed blender (or food processor) combine red bell pepper, celery, flax or sunflower seeds and lemon juice. Blend into a dressing that will be a thickish paste.

Pour over kale leaves and sprinkle on the shredded Parmesan cheese.

Massage the “dressing” into the kale chips until well coated. Add salt if desired.

Spread the coated kale single layer on a cookie sheet and bake at 375 degrees or 14 to 16 minutes.  (Or dehydrate for 8 hours).

You’ll know it’s done when the kale is still green but very dry, flaky and will crumble if you squeeze it. These are super crunchy and very addicting.

* Can also use collard greens or red chard in place of kale.

Other Add-ins: Cilantro, jalapeno, nutritional yeast, curry, cumin, thyme. (If using nutritional yeast omit the Parmesan and use 2 tablespoons)

Beebs, your Cheesy Turnip Casserole recipe is delicious.  I made that with meatloaf & salad and I think it's one of the few times that I haven't made an extra side dish for the muggles.  A great comfort food dish.  The whole family enjoyed it.  Thanks for sharing your recipe!!

Jo, I cubed the turnip to boil it.  After it was cooked I slightly mashed it with a hand masher.  You don't need it smooth like mashed potatoes, just break down the chunks.  You'll like it!

I made some parmesan turnip fries. You slice the turnips, and coat them with a little olive oil. Then you put them in a bag with parmesan cheese (not the shredded kind, but the kind from the shaker bottle), salt, pepper, whatever other seasonings you want. You bake them and I will have to look up the details and then modify this post! My mind went blank....duh....

Owensmath I made the Crispy Turnip Fries tonight and they were very good.  I should have cooked them a just little longer because they weren't quite crispy yet, but I will know for next time.  My husband & son ate them as well and were quite surprised how good they were.  My husband said they didn't even really taste like turnips.  So this recipe is a keeper.  Thanks!

  :) quorn is good..i don't eat pork products....you can but it in most supermarkets in england..i don't know if you've even heard of it in the states..its a sort of meat substitute made with a mycoprotein.. ::)..it comes in mince, sausages, chicken style chunks, ham style...i like it but i'm getting used to it...x

  I love quorn too-as I gave up meat for lent and meats are quite a big part of FTS I needed some protein.  I like the naked chicken breasts the most. I replace all my chicken with this product!

Zucchini Hummus

1 1/2 cups raw zucchini, peeled and chopped   (3.3 carbs)
2 tbsp raw tahini            (5 carbs)
2 tbsp lemon juice            (2 carbs)
2 cloves crushed garlic         
1 tbsp olive oil               
1/4 tsp ground cumin            
1/4 tsp paprika               
1/2 tsp salt               

Put all ingredients in food processor or high speed blender and blend until smooth.

Dip for cucumber slices, celery, or other low carb veggies.
Can also use it as a spread for lettuce rollups with your favorite deli meats.


Makes about 2 cups 11 carbs total or 2.75 carbs per 1/2 cup serving

I think I have overlooked this recipe  :)  Just thought I would add though that when I copied it into my recipe program it came up with 13.89 net carbs for the recipe.  Not too much of a difference but a good example of where carbs can sneak in and add up when you aren't looking  ;)

I think the mis-count is with the zucchini, garlic, and cumin.   ::)

Sounds delicious...I plan to make it soon   ;D
