I love turkey and eat it often. It's fairly inexpensive and very versatile. When I buy a turk I look for around 12-14 pounders. I cut them in half and freeze the halves separately to avoid turkey overload. This also makes the cooking time quite fast, about 2 hours. Cooking a half turk is easy. Preheat the oven to 350 degrees and place the 1/2 turk skin up in a roasting pan that has a cover. Season the skin with your fav seasonings. I go all ove the place with spices. Sometimes I use Cajun seasonings, Montreal steak seasoning, Rosemary and Thyme or just salt and pepper. Roast covered for 1.5 hours then uncovered for 30 minutes. Let rest 15 minutes before carving.

Leftovers are always fun and I made this wonderful recipe yesterday. This is creamy, delish and filling. Very satisfying!

Easy Creamy Low Carb Turkey Ala King

Ingredients

2 cups chopped cooked turkey
1/2 cup chopped celery
1/2 cup chopped mushrooms
1/4 cup chopped onion
1/4 cup chopped red bell pepper
3 tablespoons salted butter
1/2 cup heavy whipping cream
1/2 cup Heinz Turkey Gravy in a jar
1 package Shirataki fettuccine noodles
salt and pepper to taste

Directions

1- Open the noodles and rinse very well in warm water, leave in strainer to drain
2- Melt 2 tablespoons of butter in a non-stick skillet over medium heat
3- Saute the veggies till soft,
4- Mix the cream and gravy together and mix in with the veggies
5- Mix the chopped turk into the pan and stir well, cover bring to heat (do not boil, cream may curdle)
6- Pour the mixture into a serving bowl
7- Rinse the pan and return to medium high heat
8- Melt a tablespoon of butter in the pan and pour in the noodles, bring to heat
9- Salt and pepper the noodles and plate
10- Pour a generous amount of Ala King over the noodles and serve

On a cooler day, I'm going to try this out.
I might add a little cream sherry to add that "special something" I get with my beef stroganoff recipe. Wink
