Gluten Free Food

Hi Umpa,

My sister have hypothyroid. She was advise by her doctor not to take food with gluten. So, I thought maybe you know some gluten free food or recipe?

Low carb(fat to skinny) is gluten free ;) It will also help her health to get off the sugar

By not eating starchy foods, we avoid gluten.

Gluten is a sticky protein found in grains like wheat, barley, and rye.
We avoid all grains. They are ALL very high in carbs.

I get a kick out of the labels on gluten-free foods as they replace it with corn, tapioca, potatoe and other starces which is very high in sugars.  Go figure.....  So, now people with ciliac (sp) desease are getting fat instead being very skinny.

Gluten is found in various grains. But not in all foods high in carbs.

My sister-in-law has Celiac disease.
She has found that avoiding other high-carb sources like you mentioned, help her feel better.
I told her that is because by avoiding carbs, she's minimizing inflammation in her body.

Inflammation not only causes serious health problems, but makes us feel lousy, too. :P

It is always good to hear that folks with celiac disease know now how to handle this ... Way back when no one knew what was going on and died from it - how sad.

The only thing that concerns me is the amount of sugar and carbohydrates that gluten free people eat. :)
