« on: July 27, 2012, 06:40:58 PM »
This very easy and quick recipe not sure where I found it wish I could take the credit . I can only take the credit for posting it here for you  ;)

1 cup almond flour
3/4-1cup of xylitol
1tsp cinnamon
1/2tsp ground cloves
1tsp baking powder
1/2 tsp salt
1 15 oz can of pumpkin ( not pie filling )
3 eggs
1/4 cup oil
2Tbsp water

Preheat oven to 350
Mix all dry ingredients in a bowl in another bowl mix wet ingredients with the pumpkin.
Mix all together (taste batter for sweetness)
Spray 9x11 pan and pour batter in cook for 25 -  30 minuites done when toothpick comes out clean
Icing
8 oz. cream cheese softened
1 tspvanilla
3/4- 1 cup xylitol
Little cinnamon
Mix together when cake is cool spread the icing and enjoy
I got 18 small squares at 2.5 a piece
Check your carbs in your pumpkin and almond flour ( if you use now it will be less carbs)

Umpa I don't know if this could have one into the contest if so  I will copy and paste it

So..... I doubled the cake part of the recipe & baked in a large rectangular pan.  Spread the frosting on top & sprinkled with chopped walnuts.  It is kinda a combination of pumpkin cake & pumpkin pie.  It's yummy!  I have to order some zero soon because I had to use zylitol and I just can't deal with that anymore.....

OMG! OMG! OMG!  ;D :D :) ;D Best Yummy treat ever! Holy Hannah! I made the icing and my teen daughter didn't like it... so she topped hers with SF Cool Whip. It was nothing short of AMAZING! I also replaced the sweetener with 30 drops of Zero. I had a "Pumpkin Pie Spice" instead of the various spices... so basically the same thing.
Thank you! We so need a bowing *I'm not worthy* smiley... because I would be posting it RIGHT now!
