LOW CARB Pound Cake

Nice recipe!

LOW CARB POUND CAKE




Ingredients

1/2 cup butter, softened
4 ounces cream cheese, softened
48 drops FAT TO SKINNY Zero Sweetener
5 eggs
1 teaspoon lemon or orange extract, optional
1-2 teaspoons vanilla
6 1/2 ounces almond flour (1 1/2 cups plus 2 tablespoons)
1 teaspoon baking powder
1/8 teaspoon salt
Lemon or orange zest, optional

Directions

Put all of the ingredients in a medium bowl. Beat with an electric mixer until no bits of cream cheese remain and the batter is thick and fluffy. This will only take a minute or so. Spoon into a greased 9-inch round cake pan and spread evenly with a spatula. Bake at 350º 50-55 minutes. I suggest checking the cake after 40 minutes or so because mine was done in less than 45 minutes. The cake will be golden brown and firm to the touch when done.

I'm having company for dinner tonight and made this pound cake. Only I increased the amount of lemon extract -- I opened the bottle and without looking, grabbed the measuring spoon and turned the bottle upside down - thought it was a squirt bottle. It wasn't. I have no idea how much actually got in the batter. It tasted ok and smells wonderful, so I'm hoping it will be good. I didn't add any zest, although I bought a lemon for that purpose. I'll let you know.

This is a keeper. I might put some sour cream or mayonnaise in it next time, but I over-cooked it tonight and it was still good and moist except at the edges. Why did I over-cook it? The GFI (breaker outlet) that the oven is on tripped and I didn't know how long it had been off or when the cake was supposed to come out as I just set the timer and it went out with the oven so I got everything turned back on and started working on the rest of the dinner... sigh.
