Egg Plant French Fries

1- Peel and slice the eggplant then cut it into steak fries  (about twice the size of regular fries)
2- Make an beat an egg or two and coat the fries well with the egg wash
3- Coat the wet fries well with FTS fry coating
4- Heat up 1/2 cup peanut oil in a skillet over medium high heat
5- Put enough fries into the skillet to cover the bottom but not overcrowd the skillet
6- Cook the fries in oil till browned on all sides, if the oil is too hot reduce the heat to medium
7- Remove from oil and place on paper towels, salt and pepper and serve

Fry Coating

INGREDIENTS
Low Carb corn muffin mix (dixiediner.com item # 240195U) or Soy Flour
Unsweetened fried pork rinds

1- Grind your pork rinds in a food processor until they reach maximum grind.
2- Mix pork rinds with corn muffin mix or soy flour 2 to 1 with the pork rinds being the larger amount.
3- Mix in quantity and store in a tight container in your cupboard for quick easy meals.
 
 
 TIP – You can use hot and spicy or BBQ flavored pork rinds as long as no sugar has been added. Use only enough fry coating each time for the meal proposed so you don’t contaminate the entire batch.

I'm gonna grab an eggplant next shopping trip and try this out.

BTW, can almond flour be substituted for soy flour or the muffin mix?
