Can I use Stevia instead of Xylitol? I have such a sensitivity to sugar alcohols.

You can get xylitol from  health food stores or online(amazon  is my choice). It is birch bark and 100 % natural.Great for your teeth!
I find if you are sensitive to it you are using too much.I use 1/3 cup xylitol for 1 cup sugar  for what is called for in sugars in recipes.
You can use Stevia  or sweetner of your choice.(If using splenda add the carbs) Wink
This is a great cake! Smiley

Umpa, the "Carrot" Cake was delicious!!  Is it a typo or did you put 2 Tblsp. of vanilla in the icing?  I just put 2 tsp. and it was good.  I thought 2 Tblsp. would turn it brown.

We like a really vanilla vanilla flavor and when I asked Umpa she verified it is 2 tablespoons however it can be reduced if you wish.  Wink
