Paella!



INGREDIENTS
1 skinless chicken breast
6 medium/large shrimp
6 large scallops
6 hard shell clams
1 salmon filet
2 Italian sausage links
5 slices red bell pepper
3 slices yellow onion
4 tablespoons butter
Cauliflower rice (pictured below)
Cajun seasoning
Dill weed
Italian seasoning
Salt & pepper to taste
Cauliflower rice Prepare “rice” by processing a head of
Cauliflower in a food processor with a chopping blade until
The cauliflower resembles rice.


Add three tablespoons of melted butter or Benacol spread.
Salt & pepper to taste, mix well.
Preheat oven to 400 degrees. Generously butter a 10”-12”
Baking vessel. You can use any shallow casserole or baking
Dish, my favorite is my #10 cast iron frying pan with a self
Basting cover. Place all the “rice” in the bottom of the
Baking dish. Place the sliced onion and sliced pepper on top
Of the rice as if you were making a pizza. Slice the chicken
Breast and sausage into ½ inch slices and using the same
Format arrange on top. Cut the salmon into 2” squares and
Arrange the salmon, shrimp and scallops throughout the dish.
Sprinkle melted butter, dill weed and Italian seasoning all
Over the ingredients and salt and pepper to taste. Cover the
Baking dish and bake for 45 minutes.

Looking for an exciting low carb dinner tonight? Paella is a wonderful Spanish dish full of flavor....spice it up!  ;)

Well, it was indeed a big hit! They couldn't believe it wasn't really rice! They think I'm a genius. I tried to tell them it is your recipe, Doug, but they insist I'm the genius. Sorry. And the best part is that the guy doesn't even like cauliflower!

Thinking of a different kind of Holiday dinner? How about a wonderful low carb Paella! Delish! Paella can be made with many different ingredients of your choosing. Sharing such a pretty plate with family members is a wonderful tradition. I plan on making a Paella for our Christmas dinner this year! Enjoy :)
