This is zuiderdamm Almond Brownie Recipe that I changed a little and Tylers sugar is perfect after he eats theses an stays level . He has one in the morning for breakfast and one for dessert in the evening with a serving of carb smart ice cream .
This recipe can be doubled and cooked in a 13x9 pan . Put oven on 325 instead of 350 and cook for 25 minuites instead of 15-20 if you double recipe .
1 Stick of butter
1/2 Cup cocoa
1/2-3/4 Cup xylitol (check batter for your own sweetness )
2 eggs
1tsp Vanilla
1 TBSP soy flour
1/2 Cup Now almond Flour
1/2 tsp Baking Powder
1/4 Cup Heavy Whipping Cream
1/4 tsp salt
Preheat oven to 350 ,Grease 9 inch pan .
Mix butter & cocoa powder then add xylitol, eggs, vanilla & heavy Cream
Beat until smooth ,add all dry ingredients .
Pour into greased pan cook for 15-20 carbs check with toothpick inserted in center .
8 carbs for the whole recipe if your cocoa powder is 0 carbs and your almond flour is 1 carb per 1/4 cup . They will be anywhere from .9 carbs to 2.8 carbs per brownie depending on your ingredients and the amount of brownies you get from each pan . I hope yall enjoy them as much as he does !!!!
-
I made this recipe on Friday night! I didn't double the recipe, so it only made an 8 x 8 pan size. I had planned to make some ice cream sandwiches with some of them.....but as of this afternoon there's none left. ::) lol
Now ya'll know I LOVE desserts.....I topped my warm brownie with vanilla carbsmart icecream, a little walden farms chocolate syrup, a little Land of Lakes whipped cream, and a sprinkle of pecan chips. OMG.... It was like having an expensive dessert at a nice restaurant! ;D
-
Jo did you use the soy flour to replace the corn starch in the original recipe? I used xanthan gum and they seemed a bit rubbery....LOL I even cut the amount in half as used in the other post. Don't get me wrong they were so good.....I wondered if the soy flour might make them more cake like? I'll try it that way next time. Thanks for the tip!! It's good to know that Tyler's sugar doesn't spike with this one. Proof that it is safe to eat as far as carbs are concerned...LOL I bet there wasn't any complaining with testing that one was there...LOL ;)
-
Toosweet ,bless his heart he never complains I bet he test his sugar 10-15 times a day when he doent eat good or when I am using him for FTS LOL . I have not tried the gum stuff everytime I have heard they always say it will make it rubbery . I think Umpa & owensmath said that the soy would leave a bitter taste but they didnt in these . I am not a baker I just googled what to replace the cornstarch with and it came up soy flour or the gum stuff .
I had soy flour so I tried it and they were VERY good so I said why mess with a good thing a brownie for 1-3 carbs depending on the stuff you use that does not raise his sugar who could ask for more .!!! ;D
And Jan I bet you will double it next time want ya ? :D
-
I feel his pain.... I test mine very often to. I wanted to make sure I'm not messing with my sugar to much. I will sure try the soy flour.. I agree is it isn't broken why fix it...LOL
-
I sure will Jo! Wish I had thought to double it THIS time! ;D
-
these look so good , thanks
-
Think I'll give these a try today. :) That is, if I have enough almond flour.
Cool ... had just enough flour! Baking now ... :)
-
Okay, they're baked. They look "bootiful" and they smell fantastic. Now someone tell me ...
WHY THE HECK ISN'T IT DINNER TIME YET? >:(
-
My motto: Life is uncertain - eat dessert first! ;)
-
Hey I LIKE that motto!! ha ha :D
-
:D :D :D
-
Well, Jo ... Tyler's Brownies made my blog today! :)
http://renajjones.blogspot.com/2012/01/brownie-kind-of-day.html (http://renajjones.blogspot.com/2012/01/brownie-kind-of-day.html)
Thank you so much for the recipe!
-
I am glad you liked them ;D We love them . He makes them now but he wants me to make the ice cream sandwichs !
-
Jo we can't use Almond Flower at my house due to my son's treenut allergies. How much soy flour would I use instead? Rena posted a pic of these yesterday and I am DYING to make them.
-
In my brownie recipe I use flaxseed.Goes great with chocolate ;) Soy would be a equal conversion.Just remember never pack them in measuring cups.
-
that is a umpa question I guess you could try them with flax Tyler just never could make hisself like flax anything LOL he has a texture problem when he eats he drives me crazy
-

I don't buy almond flour all that much because it's $10 a bag here. I'm going to try this same recipe with flaxmeal next time because I always have that on hand. The past 2 nights I've even gotten Rick to eat a brownie with me for dessert. Last night we whipped up some heavy cream for topping and drizzled some SF chocolate syrup over it.
Thanks so much for the recipe, Jo & Tyler! :)
BTW -- I wrapped each brownie up individually in plastic wrap and am keeping them in the fridge. How does everyone else store theirs?
-
Oh, and this is the picture I posted on Facebook last night. It was hilarious because the thread went nuts in a matter of moments. Got chocolate, and people will comment! :D :D :D
-
I keep mine in the freezer ;D That looks so yummy...LOL The last batch I made I threw in a handful of nuts and some sugar free chocolate chips. When heated in the micro :o
-
Rena we usually make ice cream sandwhichs out of the brownies & vanilla carbsmart ice cream then wrap them in saran wrap . They dont last long tyler loves them . Rena did you buy whip cream ? LOL Becareful
When I maded the 9x9 pan he would eat one in the mornings for his breakfast so I just stored them in a tupperware on the counter because they dont last long .
I also made his birthday cake out of the brownies ,I dont know if you seen this or not

-
Rena did you buy whip cream ? LOL Becareful
No, we actually had some leftover heavy whipping cream, so I whipped that up instead. I can't be trusted with the cans. ::)
-
Jo I did miss that link...You did a great job! I bet it was good ;) Gonna make some icecream sandwichs this summer.....mmmmm
-
Well it wasnt the best looking cake but it was very good and a whole lot less sugar then dairy queens ice cream cake
-
Yes, the cake was awesome looking!
-
I would buy one ;)
-
LOL Someone really does need to open a place where you can go in an order nothing but low carb form appetizers to desserts
-
Yeah TooSweet! :D
-
LOL Someone really does need to open a place where you can go in an order nothing but low carb form appetizers to desserts
I agree. I thought it was so cool to see a low-carb section on Cracker Barrel's menu. I wish more places did that.
-
What we need is Umpa to open an online bakery. We could order all our fun stuff, have it shipped to the house and I would be THRILLED! Rena you're killing me with that brownie picture! LOOKS SO GOOD!
-
LOL Sherri -- me too, actually. Fortunately, I've been really GOOD and have only eaten one for dessert each night. I probably should skip a day or two, but they're too yummy to pass up. And besides, I'm back to LOSING again, so all is good.
Just don't let me near any of the Land O' Lakes whipped cream ... :o :o
-
Rena I noticed I have been using a litlle more then I am suppose to when I eat my jello . I guess I will not buy anymore . Sherrie did you try them with flax . I have not made my recipe with flax instead of Almond flour .
I think you either like flax mill or you dont and we are not crazy about it .
-
I'm going to hit the store Friday and make them for the weekend. I'm not sure if I'm going to make them with Soy or Flax, it depends on what's at the grocery store. Either way, I can't wait!
Girls why are was staying away from the Land O Lakes? I think there are three cans in my fridge. LOL
-
Girls why are was staying away from the Land O Lakes? I think there are three cans in my fridge. LOL
Lack of self-control. I suck.
-
when there is a chance of eating a whole can on 2 cups of jello you might have a problem . LOL
-
I should start a 12 step program for whipped cream addicts! :D :D I buy the whip cream in the carton and mix it up as I need it.If not all day long in the house you hear that squirting noise! I can't stay away from it! :D :D
-
(squirt noise) (squirt noise) What?? Whip cream addict?? (squirt noise) (squirt noise)
What??? (squirt noise) (squirt noise) (squirt noise)
-
i would say we got problems and yes umpa i think one is needed lol
-
Hello, my name is Jan, and I am addicted to whip cream. :D ;D :D Whew....Ok, I feel better now! ha ha
-
Hahaha!
I remember Doug saying the same thing. He kept finding himself in the fridge, squirting it right into his mouth.
And regarding Jo's comment about using a whole can on a tiny carton of Jell-O -- :D :D :D :D That's so me.
I do have some liquid left over, which is what I've been using on my brownies. I honestly can't buy the stuff anymore because I want to make it into that pudding/mousse stuff. I could eat that all day. I did! :-\
-

If you want to replace the Xylitol in this recipe with Zero, here's the conversions
24 drops FAT TO SKINNY ZERO sweetener = 1/2 cup Xylitol
36 drops FAT TO SKINNY ZERO sweetener = 3/4 cup Xylitol
-
I didn't know russell stovers had caramels Sarah?? I love the caramel dip from walden farms!Makes a great tart! ;)
-
They're called Butter Cream Caramels and the serving size is 3 caramels for 1 net carb. They're my favorite.
Thanks, Doug! I was being lazy and didn't look up the zero conversion.
I also forgot the soy flour in the batch I made last night, but they turned out ok anyway. Would be good with a few nuts.

Russell Stovers makes a bunch of sugar free candies!!!
Our local Walmart has about a dozen different kinds (including Caramel Crunch). ;)
-
I'm taking these to dinner at a friend's today. Hoping to sway her to FTS. Wish me luck!
-
Well, rats! I swapped the xylitol for ZERO and they didn't turn out well. They were very crumbly and not sweet at all. I even put an extra six drops or so in because sometimes sweeteners in baked goods lose their sweetness. I was so disappointed. Didn't impress my friend at all. Didn't impress myself either. Way too bad.
-
LOL Someone really does need to open a place where you can go in an order nothing but low carb form appetizers to desserts
I couldn't agree more ;D

I'm sorry to hear that Sarah :( :'( I was hoping to hear the Zero would help.....

I'm going to try the brownies again with some mayonnaise to make them more moist. The last batch was a little dry and crumbly, too. I know overcooking them can make them crumbly, but these weren't quite done when I checked them so I gave them a couple more minutes. More experimenting.
Thanks for the sympathy, BigTex!

You are probably right here Sarah...it sounds like a moisture issue. The xylitol does melt down to create some moisture with it's sweetness.... It stands to reason that you would need to add something in it's place. I also find that when working with the liquid sucralose (I have been using a different brand than the zero) I need to increase the amount in my recipes. (not by much though) I thought it lost sweetness myself but thought it was just me.....but now I'm thinking maybe not ::) LOL
I haven't done a lot of experimenting with it yet at least not enough to know that I need this many drops for this and that.... please let us know how you next batch goes ;)
-
Lack of moisture means one thing usually overcooking.I just made my brownies out of the Bakery book with the Zero and I could not tell the difference between that and the xylitol. I like a cake style brownie though. For a moister brownie you could use mayo or sour cream.Soy flour adds a bitterness to chocolate, so i like flax ,almond or hazelnut. For some reason with Soy flour when it hits the heat of the oven it turns bitter.I also like coconut oil for moisture. ;) Don't give up Sarah! Fight the brownie Fight! :D
The chart on the Zero for conversions was done in my kitchen.I rebaked tons of recipes out of the Bakery and never had a bulk issue replacing the xylitol(which I argued with Doug forever that I would!!). :D
-
I forgot the soy flour in the first batch and thought that might be why they were a little crumbly. I'll stop the next batch a few minutes earlier and see how it works - may change out the soy flour for almond, Umpa.
I HAVE TO TELL YOU --- I'm under 200 pounds!!!!! First time in years!!! YAY! I was under yesterday, but waited to see if it was a fluctuation. I'm down another pound today! It's been MONTHS since I lost more than a pound!
-
Don't use soy flour at all.Do you have my recipe for brownies in Bakery book?If not i will post it ;)
CONGRATULATIONS ON YOUR weight loss (http://www.fattoskinny.com/)!!!! I AM SO HAPPY FOR YOU!!!
-
I do have all your books, Umpa. Except the one just coming out. I'll have it, too, next week I hear. I'll try your brownies next time. I've topped the ones I've been making with the caramel candy from Russell Stover. Very good! I'm going to put it inside the brownie next time. I also want to make brownie chips and sandwich shortening (butter)cream frosting with them for an oreo cookie.
And I have to work on the tortillas. So many good things to cook. I got boneless ribs yesterday. It's been a long time since I had bbq ribs. I accidentally put the grill upside down on the coals last time I used it. sigh. Good thing I sprayed pam on both sides of it!

That's a huge milestone!
And BigTex, you'll be under 300 before you know it.
I started at 316 and have never looked back!
Like you, I was over 300 for a VERY long time too!
This has been the longest period of time EVER that I've kept off most of my excess FAT!
FTS is WONDERFUL!!! :) :) :)
I've been working on that last 20 pounds or so for quite some time.
I know that one day I'll step on the scale and 'BOOM!', it will have disappeared! ;)
-
TY mouseissue for the words of encouragement ;D I slipped up last week and actually gained some but am back to where i was so hopefully in the next week I'll be down....
-
I made the brownies with the Zero and thought they weren't sweet enough and not as moist. I am going to give another try because these are one of our favorites, mayo might help.

You're quite welcome, BigTex! ;)
You have the "answer" so you don't worry about slip-ups!
You also have the right attitude to succeed.
None of us is perfect.
All we can hope to do is learn from our mistakes and take steps to avoid repeating them.
You'll do great!!! ;D ;D ;D

Thanks for the info, Amber. It's nice to know that it's not just me. I'll make brownies again and really jazz them up, then report here. I love the zero in cold things. I'll play with it some more in baked things and see what I'm doing wrong. It's a good thing I put the candy on these or the racoons would get them. But I hate to waste the candy...

I had a sweet tooth tonight so I made some of "Katary's nogurt"...... Its amazing ;D ;D ;D
-
Sarah don't forget ice cream sandwiches! ;)
Try tasting the batter before you bake it.Just make it a little sweeter. There is nothing in the Zero to dry it out. There are no sugar alcohols just liquid succralose.I have never made this recipe I will and report back.I always use the one in the Bakery book. ;)

This is the recipe we use for brownies and they are delicious!
FAT TO SKINNY Brownies

¼ pound butter (1 stick)
1 teaspoon salt
2 tablespoons vanilla
4 eggs (room temp best)
½ cup unsweetened cocoa
24 drops FAT TO SKINNY ZERO sweetener

1 tablespoon baking powder
1/3rd cup heavy cream
2/3rd cup water
1 cup rough chopped walnuts

2. Melt chocolate in double boiler over medium heat and leave over hot water till needed.
3. Grease a 9X13 pan or use an individual brownie pan as shown.
4. Cream the butter until fluffy.
5. Add the ZERO to the butter and cream them together until fully combined (aim for a fluffy texture).
6. Add the vanilla and beat the eggs into the mixture, one at a time.
7. Add salt and cocoa, beat well.
8. Add chocolate, beat until fluffy.
9. Add the rest of the Ingredients and mix well to combine.
10. Pour into a pan and bake for 20 minutes until top springs back.
11. Cool then cut into 32 squares.
-
I'll try this recipe next time. Thanks.
-
These are cake brownies not wet brownies.I like them as Ice cream sandwiches because they freeze well.I also like them with peanut butter.Taste the batter before putting in the oven.I don't like anything wicked sweet so I am alittle lighter on the sweetener. These are really low carb ;)
-
I've been playing with Tyler's brownies because as I've mentioned before, I'm not a fan of flax - it has a 'slimy' texture to me - I never ate hot oatmeal for the same reason - I keep trying the flax, but find myself going "gack, gack" after a bite or two and then throwing it away. I tried golden flax, but it's the same thing.
-
Amber, how many drops of Zero did you use?
Here's the Tyler recipe and it has a big spread between the sweetener 1/2 cup to 3/4 cup Xylitol. To replace that amount with Zero you would use 24 drops for 1/2 cup sweetness. 36 drops for 3/4cup sweetness.
This recipe can be doubled and cooked in a 13x9 pan . Put oven on 325 instead of 350 and cook for 25 minuites instead of 15-20 if you double recipe .

SarahC try adding a little oat fiber to the flax meal no slimy taste and no added carbs.
-
Good idea Momma ;)
-
I hadn't heard the oat fiber suggestion before. I agree about the slimy factor with flax. I feel a netrition order coming on.
-
Sometimes oat fiber tends to dry things out, so it will take some experimentation - especially since these (Tyler's) have a dryness problem already. After a couple failures, I tend to lose interest. I'll try Umpa's recipe and add some oat fiber. Thanks Momma.
-

Hi Sarah! :)
Oat fiber is a soluble fiber.
Meaning it will absorb water (i.e. moisture).
If you've ever made Quaker oatmeal, you could watch the water vanish before your eyes.
So when using oat fiber, add it slowly and be prepared to add more liquid.
